El espumoso moderno nace en la comarca del Penedès, vinculado a una cultura vinícola especial de la zona, unida a unas tradiciones de enología que, a partir de la revolución industrial, condujeron al entendimiento y la aplicación de la doble fermentación. En este libro estudiaremos la geografía y las variedades de uva más adecuadas, veremos cómo se elabora un vino base y de qué manera, ese vino ya embotellado y guardado durante un largo período de tiempo en la cava, una cueva subterránea, fermenta de nuevo y produce espuma. Veremos todo el proceso: desde la vendimia, la elaboración del vino base, la toma de espuma de la botella, la clarificación y la crianza, y el momento en el que cada bodega aplica la fórmula que le da a cada marca su sabor característico. Las exigencias que la comisión de control aplica para que un vino espumoso pueda ser aceptado, condujeron a la industria del cava a vender 150 millones de botellas al año. Aquí descubriremos cómo se conquistó el mercado estadounidense, quiénes son los principales compradores europeos y cómo comenzaron a elaborar el cava americano en las mejores vitivinícolas del estado de California. También descubriremos una gran novedad que aún no está en el mercado: el «Cava de Paraje», que solo se puede elaborar a partir de viñas muy específicas y singulares, con una reglamentación más estricta que la del cava normal y que representa el máximo refinamiento de este vino. At the same time, the reviews and discussions included are used by the authors as starting points to draw conclusions and propose a theory of socio-ecological transformations. The theoretical and methodological innovations of this book include a distinction of two types of metabolic processes: tangible and intangible; the analysis of the social metabolism at different scales (in space and time) and a theory of socio-ecological change overcoming the merely “systemic” or “cybernetic” nature of conventional approaches, giving special protagonism to collective action.

El vino se produce fermentando uvas trituradas utilizando varios tipos de levadura. La levadura, un tipo de bacteria, consume los azúcares que se encuentran en las uvas y los convierte en alcohol. Se utilizan diferentes variedades de uvas y cepas de levaduras dependiendo del tipo de vino que se produzca. Usted puede reconocer la levadura de la fabricación de pan. El dióxido de carbono es uno de los subproductos de la levadura y la caja le deja el pan. Del mismo modo, el vino espumoso y Champaign se pueden hacer alterando el proceso normal de vinificación para mantener el dióxido de carbono hecho de la levadura. El alcohol es el otro subproducto de la levadura y es por eso que se utilizan en la producción de vino. Aunque otras frutas como las manzanas y las bayas también se pueden fermentar, los vinos resultantes normalmente llevan el nombre de la fruta a partir de la cual se producen y se conocen genéricamente como vino de frutas o vino de campo (no confundir con el término francés vin de pays). Otros, como el vino de cebada y el vino de arroz, están hechos de materiales a base de almidón y se asemejan más a la cerveza y el alcohol que al vino, mientras que el vino de jengibre está fortificado con brandy. En estos casos, el uso del término vino es una referencia al mayor contenido de alcohol, más que al proceso de producción.
