Book excerpt: Three years ago when Professor Garry Cole visited our Mycology unit at the Pasteur Institute we discussed the possibility of organizing a small International Symposium on "Isolation, Purification and Detection of Fungal Antigens" limited to 8 American/Canadian scientists and to 8 French participants. The location chosen was the Pasteur Institute because of the historical and current importance of the Institute as a Center for Research in Immunology and Medical Mycology. The interest demonstrated by all medical mycolo gists we contacted led us to expand the small original meeting to an international symposium in which all aspects of antigens of pathogenic and allergenic fungi and actinomycetes related to man, animals, and even plants would be discussed. Our wish was also to hold this Symposium in the same week as the Anniversary meeting of the French Society of Medical Mycology which was founded at the Pasteur Institute 30 years ago with my colleagues Gabriel Segretain and Francois Mariat.

Book excerpt: A variety of processing methods are used to make foods edible; to pennit storage; to alter texture and flavor; to sterilize and pasteurize food; and to destroy microorganisms and other toxins. These methods include baking, broiling, cooking, freezing, frying, and roasting. Many such efforts have both beneficial and harmful effects. It is a paradox of nature that the processing of foods can improve nutrition, quality, safety, and taste, and yet occasionally lead to the formation of anti-nutritional and toxic compounds. These multifaceted consequences of food processing arise from molecular interactions among nutrients with each other and with other food ingredients. Since beneficial and adverse effects of food processing are of increasing importance to food science, nutrition, and human health, and since many of the compounds formed have been shown to be potent carcinogens and growth inhibitors in animals, I organized a symposium broadly concerned with the nutritional and toxicological consequences of food processing. The symposium was sponsored by the American Institute of Nutrition (AIN) -Federation of American Societies for Experimental Biology (FASEB) for its annual meeting in Washington, D.C., April 1-5, 1990. Invited speakers were asked to develop at least one of the following topics: 1. Nutrient-nonnutrient interactions between amino acids, proteins, carbohydrates, lipids, minerals, vitamins, tannins, fiber, natural toxicants, etc. 2. Effects of radiation. 3. Thermally induced formation of dietary mutagens, antimutagens, carcinogens, anticarcinogens, antioxidants, and growth inhibitors. 4. Effects of pH on nutritional value and safety.

Book excerpt: Nuclear magnetic resonance (NMR) is having an enormous liTIpact on biomedical research both at the basic science and clinical levels. In order to appreciate the elegance and power of this technology a historical perspective is in order. In 1924 Pauli suggested that hydrogen nuclei might possess a magnetic IIlOlllent. This was in fact confinned by Rabbi in 1939 who demonstrated that a beam of hydrogen molecules in the presence of a magnetic field could be mutated by radio frequency fields resonating at the Iarmor frequency. 'Ihe first successful NMR experiments in condensed matter were independently conducted in late 1945 by Purcell, Torrey and PoUnd and by Bloch, Hansen and Packard. 'Ihe Purcell group detected proton NMR in solid paraffin and the Bloch group detected proton in liquid water. Bloch and Purcell received the Nobel Prize in physics in 1952 for these observations . Until about 1952, studies of liquids and solids with broad resonance lines dominated the field of NMR. However, the reports of 3 1 P NMR chemical shifts in several corrpounds in 1949 by Khight, of 14 N resonances in several ions by Proctor and Yu in 1950, and of 1 9 F resonances in several corrpounds in 1950 by Dickinson led to the development of high resolution NMR in Itquids. since the molecular motions in liquids result in very narrow lines compared to those in solids, :much smaller chemical shifts could be detected.

No official recommendation concerning the sub ject matter or products discussed is implied in this book. This book encompasses many aspects of this multifaceted field. Topics covered represent biochemical, immunochemical, bioorganic, biophysical, metabolic, nutritional, medical, physiological, toxi cological, environmental, textile, and analytical interests. The discoveries and developments in any of these areas inevitably illumine others. Machiavelli: The Prince (1513) These are the Proceedings of a Conference on Temperature and Environmental Factors and the Testis which took place at New York University School of Medicine, December 8th and 9th, 1989. There is good reason to believe that this was the first of its kind to address, exclusively, the implications of temperature for this highly thermosensitive organ and its precious genetic cargo. The organizers of the Conference hoped to stimulate interest in this area which, paradoxically, has a considerable literature but which has received scant attention and sometimes outright opposition from clinicians expert in male infertility. There have been studies of the relationship of temperature to reproduction starting in the mid-18th Century with observations of the relationship of water temperature to spawning of fish. There is also a vast literature on the deleterious effects of externally applied heat upon spermatogenesis but little study of the possibility that intrinsic heat may be an important etiologic factor in subfertile semen. Today, fertility research has largely ignored this in favor of research in areas which have not produced successes, in terms of live births, comparable to what can be obtained by varicocelectomy (when appropriate) or scrotal hypothermia: viz. 1. Concentration upon the endocrine aspects of testicular function and its relation to spermatogenesis.

In the case of proteins, such crosslinking often results in important changes in chemical, functional, nutritional, and biomedical properties, besides physical properties simply related to molecular size and shape. (Nucleic acids, carbohydrates, and other biopolymers are correspondingly affected.) Since proteins are ubiquitous, the consequences of their crosslinking are widespread and often profound. Scientists from many disciplines including organic chemistry, bio chemistry, protein chemistry, food science, nutrition, radiation biology, pharmacology, physiology, medicine, and dentistry are, therefore, minutely interested in protein crosslinking reactions and their implications. Because protein crosslinking encompasses so many disciplines, in organizing the Symposium on Nutritional and Biochemical Conse quences of Protein Crosslinking sponsored by the Protein Subdivi sion of the Division of Agricultural and Food Chemistry of the American Chemical Society, I sought participants with the broadest possible range of interests, yet with a common concern for theore tical and practical aspects of protein crosslinking. An important function of a symposium is to catalyze progress by bringing together ideas and experiences needed for interaction among different, yet related disciplines. To my pleasant surprise, nearly everyone invited came to San Francisco to participate.

Book excerpt: This volume is based on the program of the International Conference on Drugs of Abuse, Immunity and Immunodeficiency held in Clearwater Beach, Florida. It was sponsored by the University of South Florida College of Medicine with the support of the National Institute on Drug Abuse. During the past few decades, drugs of abuse, including marijuana, cocaine, opiates and alcohol, have been studied by biomedical scientists in terms of the systemic effects of the drugs as well as alterations in neurophysiology and the psychology. More recently, the scope of such investigations has been broadened to include alterations within the immune system, and the influence of altered immunity on physiological and psychological consequences of drug abuse. In this regard, participants in the Clearwater Beach conference provided new information concern ing both basic and clinical aspects of drugs of abuse and immunity, especially immunodeficiency. Advances have been made in recent years in understanding the nature and mechanisms regulating the immune response and the mechanisms by which drugs may influence immune responses. In particular, the emergence of psychoneuroimmunology as a new discipline has heightened interest in immune responses influenced by psychoactive drugs. This has resulted in interdisciplinary investigations involving clinical and basic scientists including microbiologists, immu nologists, physiologists, psychiatrists, oncologists and others. The recreational use of the above mentioned drugs by large numbers of individuals has aroused serious concern about the consequences of this activity.
