The study evaluated handling techniques and three types of dairy display cases. More efficient work methods were developed for: Ordering, receiving, price marking, and stocking merchandise. A special study was made of handling egg cartons in wire baskets instead of the conventional fiberboard case. Four categories of items contribute 70 percent of the total units sold and 69 percent of the total sales. Improving the handling of these four items (milk, butter, margarine, and eggs) has considerable laborsaving potential. A record of past sales was incorporated into the order form for use as a guide in ordering This is important in the dairy department, because 72 percent of the items sell less than a case a week.
