Book excerpt: Mycotoxins in Foodstuffs—3 is a collection of invited lectures presented at the International Union of Pure and Applied Chemistry's Third International Symposium on Mycotoxins in Foodstuffs, held in Paris, France, on September 16-18, 1976. The papers explore the health hazards posed by mycotoxins found in foodstuffs, including aflatoxins and trichothecenes, as well as ways of addressing the problem. This book is comprised of 11 chapters and begins with a discussion on how to design a program for monitoring problem foods and surveying potential problem foods for a number of mycotoxins. The next chapter describes a methodology for the design and evaluation of testing programs to estimate aflatoxin concentrations in granular foodstuffs. The action taken by various countries regarding mycotoxins in foodstuffs (food and feed), under legislative provision or code of practice, is then examined. Subsequent chapters deal with the metabolism of aflatoxin and other mycotoxins in relation to their toxicity and the accumulation of residues in animal tissues; mode of action of trichothecenes; and mode of action and human health aspects of aflatoxin carcinogenesis. The human health hazards associated with mycotoxins are also considered, along with prevention, elimination, and detoxification of aflatoxins. This monograph will be a useful resource for chemists, nutritionists, food scientists, and toxicologists.

The occurrence of mycotoxins in foods is an unavoidable worldwide problem. About 80 countries have imposed regulatory limits to minimize human and animal exposure to mycotoxins. Regulatory limits, including international standards, have tremendous economic impact and must be developed using science-based risk assessments. The purpose of Mycotoxin Protocols is to provide the scientific and technological basis for analytical methods for use in obtaining the exposure data needed for risk assessments. Mycotoxin Protocols is divided into four sections, which are interc- nected. The first section: Chapters 1–5 describe the general techniques for mycotoxin analysis with emphasis on the importance of method validation based on statistical parameters; sampling procedures for collecting a sample as representative as possible of a bulk lot; the isolation of mycotoxins for use as analytical standards or for toxicological studies; the evaluation of purity and preparation of standards; and the detection and identification of impu- ties in isolated mycotoxins. Sections 2–4: Chapters 6–19 describe the most current chromatographic and immunochemical methods for studies on the major mycotoxins.

The differences in environmental conditions (temperature, light, rainfall etc. ) and in exposed cultivated plants (type of cereals, cultivars etc. ) in the distinct European countries have significantly influenced the distribution of specific toxigenic fungi and related mycotoxicological problems. In addition, biogeographically structured lineages within some important toxigenic fungi have been recently discovered, of reproductive isolation. Transglobal showing a long evolutionary history transposition of plant products seems to have significantly contributed to the spreading of toxigenic species and lineages worldwide. Therefore, the migration of agriculturally important toxigenic fungi generated by trade exchanges may represent a major source of inoculum for new plant diseases in Europe and for a wider genetic diversity of local populations. It was our goal to provide the reader with an update of researches and surveys on the natural occurrence of toxigenic fungi and mycotoxins performed at a European level during the last 5-10 years. That is, the field of Natural Products is broad, but similar in techniques and approach, ancient but modern, and bas been and continues to be extremely valuable to humankind. We wanted the book to serve as an introductory text for courses and as a reference work for the future. We also determined to include the structure of every chemical in the chapter where it was mentioned so the reader would not have to find the structure somewhere else or to try and deduce the structure from the chemical name. Little did we know what an undertaking these goals would be or the time this would take.
