Book excerpt: La recherche d'agents naturels conservateurs remplacant les additifs chimiques pour ameliorer la securite alimentaire est actuellement l'une des priorites des chercheurs.Les plantes constituent une source interessante de composes a molecules bioactives. tel que les huiles essentielles(HEs). L'etude des proprietes antibacteriennes in vitro a concerne sept HEs extraites a partir de sept plantes aromatiques. Ensuite l'application sur la viande bovine hachee a concerne seulement deux HEs parmi les sept etudiees.Les analyses par CPG/SM des HEs de mentha piperita et de Lavandula angustifolia ont indique qu'il y a une abondance des composes monoterpeniques oxygenes.Les travaux menes au cours de notre etude auront permis, de mettre en lumiere le potentiel antibacterien des HEs des differentes plantes etudiees. L'HE de Satureja hortensis s'est distinguee par son activite antibacterienne prononcee sur toutes les souches testees.Les resultats concernant l'application des HEs de Satureja hortensis et Mentha piperita comme agents antibacteriens naturels sur la viande semblent etre encourageants puisque leurs ajout a contribue a la diminution de bacteries inoculees dans la viande hachee.

Dans cette thèse, il est tout d'abord détaillé l'origine de l'aromathérapie, le mode d'extraction ainsi que les critères d'identification des huiles essentielles. Nous voyons ensuite comment s'effectue l'assurance-qualité des huiles essentielles et des produits d'aromathérapie. Il est ensuite rappelé les précautions générales d'emploi et les principaux effets indésirables des huiles essentielles. Dans une seconde partie, il est abordé l'usage des huiles essentielles dans certaines pathologies fréquemment rencontrées au comptoir et pour lesquelles le choix parmi les spécialités existantes est restreint. Nous verrons quelles huiles essentielles peuvent être utilisées dans le cadre de l'acné, de la cystite, du furoncle/panaris et de l'herpès labial, études à l'appui. Il est déterminé pour chaque pathologie abordée le cadre adapté au bon usage de ces huiles essentielles, c'est-à-dire les limites entre la possibilité d'un conseil donné par le pharmacien et la nécessité de consulter un médecin. Il est clairement montré dans ces études que les huiles essentielles présentent une action anti-infectieuse contre les germes responsables des pathologies abordées.
