In addition it should be valuable to experienced teachers as it contains discussions of many of the practical teaching problems that they meet in their daily work, as well as a more general study of the purposes and results of home economics teaching. Teachers of special methods courses in home economics have been handicapped because little material on the principles and methods of teaching home economics has been available for use as text or reference books for these classes. This has resulted not only in less effective teaching in these courses, due to the necessity of using a lecture method rather than a problem method in the class, but also in the slow development of a common understanding or interpretation of some of the most fundamental problems in home economics teaching. This book has been written with the hope that it will be of assistance in both of these situations. It is based on several years' experience in teaching a special methods course in which many of the students have been experienced teachers. The point of view that is emphasized and the conclusions that are reached are the results of the discussions carried on in these classes. It is because this material embodies or reflects the consensus of opinion of many persons who have received their training in schools in different parts of the country that it is offered as a first step toward a more scientific study of the teaching of home economics. In the preparation of the book the authors have endeavored to adapt it to the various types of persons whose needs they hope to serve. Before the war these studies were recognized by some as an essential part of the general education of every girl. With the declaration of peace, they assume a new significance and appear as an indispensable part of her education. This is true because every girl needs instruction regarding better and more healthful living, and training in those practices which will enable her to live her daily life more intelligently, to rear her children more thoughtfully, and to serve her community and country more efficiently. These studies are needed by some because they prepare also for certain definite wage-earning vocations. This book draws the distinction between home economics studies as organized for general or liberal education purposes and such lines of specialized vocational training as may have grown out of them. It is the conviction of the authors that only through a closely woven course involving both theory and practice can the subject matter offered have any real value to the students. The book presupposes courses in the various phases of Home Economics, - practical, scientific, artistic, economic, and sociological, - of greater or less intensity. In other words, it is taken for granted that the student who will use it will be familiar with the scope of the field, and that her course in methods will serve as a means of evaluating and unifying the material she gains through her technical courses, and interpreting it in terms of elementary and secondary school teaching. Book excerpt: Excerpt from The Journal of Home Economics, 1910, Vol. 2: Published by the American Home Economics AssociationAt about eleven o'clock, the general meeting adjourned and while some of the delegates went to visit the Carnegie Nutrition Laboratory, two sectional meetings were formed, one devoted to Extension Work in Home Economics, the other to the Problems of Domestic Art teachers.The Extension Program included a paper by Professor William D. Hurd of Massachusetts Agricultural College, on Relations of University and College Departments of Home Economics to the Outside Community; an address by Miss Van Rensselaer, and an informal discussion which helped make clear the obligations of Home Economics workers outside their institutions.The Domestic Art section considered the topic, Hygienic Dress and was presided over by Mrs. Mary Schenck Woolman of Teachers College. Papers were presented by Dr. Dudley A. Sargent of Cambridge, Mass, and by Dr. Eliza Ransom of Boston, and a significant discussion followed.After the adjournment of the morning meetings the delegates repaired to the lunch room of Simmons College as guests of the college at a cafeteria luncheon. Following this, they reassembled for the closing session of the convention. At this the president's annual address on The Outlook in Home Economics was delivered, and matters of business, including committee reports and the election of officers, were transacted as reported elsewhere. Classification of Foods I - Carbohydrates: Produce fuel and energy. (a) Starch is found in large amounts in cereals and flour, rice, macaroni, etc. In vegetables such as corn, potatoes, dry peas and dry beans, etc. (b) Cellulose is the fibrous material holding the food elements of grain products, vegetables, and fruitin shape. (c) Sugar is found in cane sugar, maple sugar, honey, milk, fruits, especially dates, raisins and prunes and some of the vegetables. II - Fats: Produce fuel and energy. Fat is found in cream, butter, vegetable oil, nuts, fat of meat, etc. III - Proteins: Build and repair tissue. Proteins are found in milk, cheese, eggs, meat, fish, dried peas and dried beans, nuts, etc. IV - Mineral Matter: Builds tissue, bone and teeth, helps to control and regulate body processes, and keepsthe blood in good condition. It is found in vegetables, fruits, milk, eggs and whole grains. V - Waterfunctions in all of the body processes. It is present not only in food, but in every part of the body. It quenches thirst, helps circulation, aids digestion, regulates body temperature, stimulates the nervous system, and carries off waste. VI - Vitamines: Promote growth.
