Book excerpt: Mary Ann Conklin, also known as "Madame Damnable," ran Seattle's first hotel, the Felker House, which burned to the ground in the Great Seattle Fire of 1889. The Rainier Hotel was erected quickly following the Great Seattle Fire but razed around 1910. The Denny Hotel, an architectural masterpiece later known as the Washington Hotel, was built in 1890 but torn down in 1907 during the massive regrade that flattened Denny Hill. Upon opening in 1909, the Sorrento Hotel was declared a "credit to Seattle" by the Seattle Times. The Olympic Hotel was the place for Seattle's high society throughout the 1920s. The Hotel Kalmar was a workingman's hotel built in 1881 and was razed for the Seattle tollway. The Lincoln Hotel was destroyed by a tragic fire in 1920, along with its rooftop gardens. The famous and grand Seattle Hotel in Pioneer Square was replaced by a "sinking ship" parking garage, thus sparking preservationists to band together to establish Pioneer Square as a historic district. Robin Shannon is the author of two previous books in Arcadia's Images of America series: Cemeteries of Seattle and Seattle's Historic Restaurants. In the mid-nineteenth century, as westward expansion increased and railroads developed, stockyard companies formed in order to meet the demand of a growing nation. Contrary to markets, these companies were centrally organized and managed by a select few principal partners. America's Historic Stockyards: Livestock Hotels is an examination of such stockyards, from their early beginnings to their eventual decline. Stockyards helped to establish some of America's greatest cities. Early on the scene were stockyards in cities such as Cincinnati, otherwise known as "Porkopolis," and meat stockyards and packing powerhouse Chicago, which was considered the number one livestock market in the nation. Markets soon opened in the Midwest and eventually expanded further westward to California and Oregon. Other smaller markets made large contributions to the industry. The cow towns of Fort Worth and Wichita never reached the status of Chicago but did have large livestock receipts. Fort Worth, for instance, became the largest horse and mule market in 1915, as World War I produced an increased demand for these animals. Meatpacking moguls known as the Big Four--Phillip Armour, Gustavus Swift, Nelson Morris, and Edward Cudahy--usually financed these growing markets, controlled the meatpacking business and, in turn, the stockyards companies. Although the members changed, this oligopoly remained intact for much of the duration of the stockyards industry. However, as railways gave way to highways, the markets declined and so too did these moguls. By the end of the twentieth century, almost every major market closed, bringing an end to the stockyard era. J'Nell Pate's examination of this era, the people, and the markets themselves recounts a significant part of the history of America's meat industry.

By the mid-1900s, hotels such as the Carolinian, the Nags Header, and the Arlington as well as smaller motels and cottage courts like Journey's End, the Sea Foam, and the Cavalier dotted the coastline. Most motels were independent, family-run operations. Many guests returned yearly, reuniting with the motel owners and other visitors. However, by the end of the 20th century, many of these mom-and-pop establishments had become a distant memory, lost to wrecking balls and replaced by large beach houses. This book recalls these hotels and motels and their impact on the Outer Banks and its visitors.

Since the 1980s it has become more common when the New York Times columnist William Safire adapted it to describe himself as the language maven. The word from Hebrew is mainly confined to American English and was included in the Oxford English Dictionary second edition (1989). My three hotel mavens are: 1) Lucius M. Boomer, one of the most famous hoteliers of his time, was chairman of the Hotel Waldorf-Astoria Corporation. In a career of over half a century, he directed such celebrated hotels as the Bellevue-Stratford in Philadelphia, the Taft in New Haven, the Lenox in Boston, and the McAlpin, Claridge, Sherry-Netherland and the original as well as the current Waldorf-Astoria in New York. 2) George C. Boldt who was the genius of the original Waldorf-Astoria. It was said of him that he made innkeeping a profession and, more than any man, was responsible for the modern American hotel. 3) Oscar of the Waldorf who was described in 1898 by the New York Sun: In only one New York hotel, however, is there a personage deserving to be called a matre dhotel. Anyone who studies him closely will soon arrive at a firm conviction that he might quite as appropriately have been called General or Admiral, if circumstances had not led him into the hotel business. Oscar knows everybody. Oscar was a superstar of his time and one of the stalwarts who managed both the original and the current Waldorf-Astoria. Among his many duties, Oscar commanded a staff of 1,000 persons bedsides conducting a school for waiters, at the time the only one of its kind in the United States. In 1896, Oscar wrote one of the greatest cookbooks of its time: The Cook Book by Oscar of the Waldorf. It contains 907 pages and 3,455 recipes.

Book excerpt: During the thirty years prior to the Civil War, Americans built hotels larger and more ostentatious than any in the rest of the world. These hotels were inextricably intertwined with American culture and customs but were accessible to average citizens. As Jefferson Williamson wrote in "The American Hotel" ( Knopf 1930), hotels were perhaps "the most distinctively American of all our institutions for they were nourished and brought to flower solely in American soil and borrowed practically nothing from abroad". Development of hotels was stimulated by the confluence of travel, tourism and transportation. In 1869, the transcontinental railroad engendered hotels by Henry Flagler, Fred Harvey, George Pullman and Henry Plant. The Lincoln Highway and the Interstate Highway System triggered hotel development by Carl Fisher, Ellsworth Statler, Kemmons Wilson and Howard Johnson. The airplane stimulated Juan Trippe, John Bowman, Conrad Hilton, Ernest Henderson, A.M. Sonnabend and John Hammons.. My research into the lives of these great hoteliers reveals that none of them grew up in the hospitality business but became successful through their intense on-the- job experiences. My investigation has uncovered remarkable and startling true stories about these pioneers, some of whom are well-known and others who are lost in the dustbin of history.
