The work with prunes during the season of 1913 was confined largely to the precooling of carefully handled lots, there being no comparable commercially handled lots of fruit for purposes of comparison, as rainy weather during the harvesting season rather discouraged fresh fruit shipments, especially as the prices prevailing for evaporated or dried fruits were eminently satisfactory. On account of the impracticability of securing a consignment of any definite number of cars to any one market, actual shipping experiments had to be omitted during both years, and all experimental series were held in an iced car at Salem. Book excerpt: Excerpt from The Relation of Maturity of California Plums to Shipping and Dessert Quality Since California plums are produced two to three thousand miles from the principal eastern markets, the harvesting and shipping of them is a most important problem. Eight to twelve days. Must usually elapse between the time of loading the fruit into refrigerator cars and its arrival on the market. From one to three days additional maybe necessary before it reaches the retail purchaser. Under these condi tions it is necessary, therefore, that highly perishable fruits, such as plums, be harvested and shipped before becoming tree ripe, if they are to carry satisfactorily. Firmness is not only essential for success ful long-distance shipment but after the necessary rehandling the fruit must be delivered to the retailer in a firm, sound condition. On the other hand, if picked too early, plums will not ripen with good dessert quality. In general, the nearer tree ripe the fruit when picked, the better the dessert quality when fully ripe. The commercial grower and shipper must therefore pick and handle the fruit so it Will arrive in a satisfactory market condition, and at the same time secure the highest possible dessert quality. In View of the insistent demand from dealers that nothing but hard fruit be shipped, there has developed a tendency to harvest a portion of the crop at least, so early as to sacrifice considerable of its eating quality. This investigation accordingly Was undertaken to determine as accurately as possible under existing transportation conditions when the leading plum varieties should be harvested. The commercial production of sweet cherries in the United States is largely confined to the states west of the Rocky Mountains, the commercial production of sour cherries, to the states east of the Rocky Mountains. Sweet. Cherries are used mainly as fresh or canned table fruit and in the manufacture of maraschino cherries, while the bulk of the sour cherries are used as a pie fruit. California is the most important. State in the production of sweet cherries. The average annual production in California during the past four years, 1925 - 1928, amounted to tons, as against 00 tons in Oregon and tons in Washington. From 1921 to 1926 there was a. Gradual increase in the bearing acreage of cherries in California, amounting on the average to almost 400 acres a year. 'during the past three years the increase has been much more rapid, amounting to about 800 acres a year. Indications are that this rapid increase will be maintained during the next few years. In 1929 there were acres of bearing cherries in the state and nonbearing acres. The California Cooperative Crop Reporting Service estimates that by 1932 the bearing acreage will amount to acres, an increase of 23 per cent over the bearing acreage in 1929.
