K. Chattopadhyay and published by NIIR PROJECT CONSULTANCY SERVICES. This book was released on 2022-03-22 with total page 504 pages. Available in PDF, EPUB and Kindle. Book excerpt: In India, maize is becoming third most significant crop. Its significance stems from the fact that it is utilised not only for human food and animal feed, but also for corn starch manufacturing, corn oil production, and the generation of baby corns. Additionally, maize stover, the leaves and stalk of the maize plant, is used for forage, biofuel production, and chemical production. Corn is also processed into a multitude of food and industrial products including:- Ø Corn Starch is a yellow powder made from finely ground, dried corn, while cornstarch is a fine, white powder made from the starchy part of a corn kernel. Ø High fructose corn syrup (HFCS) is a sweetener derived from corn syrup, which is processed from corn. Ø Corn oil contains some healthy components like vitamin E and phytosterols, but overall it's not considered a healthy fat. Ø Corn ethanol is produced from corn biomass and is the main source of ethanol fuel, mandated to be blended with gasoline in the Renewable Fuel Standard. Ø Some strains of corn (Zea mays) are cultivated specifically as popping corns. Ø Dextrose Anhydrous can be used as sweetener in baked goods, candies, gums, dairy products like some ice-creams and frozen yogurts, canned foods, cured meats etc. Ø Maltose is a sugar that tastes less sweet than table sugar. It contains no fructose and is used as a substitute for high-fructose corn syrup. Ø Maltodextrin is a white powder made from corn. To make it, first the starches are cooked, and then acids or enzymes such as heat-stable bacterial alpha-amylase are added to break it down further. Ø Dextrose is the name of a simple sugar made from corn that's chemically identical to glucose, or blood sugar. Ø Sorbitol, or glucitol as it is sometimes called, is a slow-metabolizing sugar alcohol derived from fruits, corn and seaweed. The global maize market is expected to grow at a CAGR of 3.8%. The factors that affect the demand for starch mainly include population growth and industrial development of a country; specifically the food and beverage, textiles, paper and printing, pharmaceuticals and other health and beauty products, and adhesives. The demand for high-fructose corn syrup (HFCS) sweeteners across the country is majorly due to its wide usage in the confectionery, bakery, and beverage industries, especially soft drink manufacturing. Rising health awareness among consumers has resulted into increasing preference for corn oil due to its health benefits. More ethanol production means more demand for corn. According to the most recent statistics released by the U.S. Department of Agriculture, 35%, or 5.25 billion bushels, of the projected 15.062 billion bushels of corn harvested will be processed into ethanol. The book covers a wide range of topics connected to Maize Products, as well as their manufacturing processes. It also includes contact information for machinery suppliers, as well as images of equipments. A complete guide on Maize (Corn) Processing and Manufacture of Maize Products manufacture and entrepreneurship. Download or read book The Dictionary of Flavors written by Dolf A. De Rovira and published by LibreDigital. This book was released on 1999 with total page 548 pages. Available in PDF, EPUB and Kindle. Book excerpt: The Dictionary of Flavors defines flavors used in foods, beverages (alcoholic and non-alcoholic), tobacco, and pet and animal foods. Comparative flavor chemistry is a very useful tool in evaluating and describing homologous groups of similar chemical structures. Thus, the author has collected the GRAS (Generally Recognized As Safe) ingredients into chemically similar collections, where these structural relationships would dictate flavor attribute similarities. In this way, predictable aroma types can be more easily memorized. In addition to the descriptions of flavor chemicals and natural products, there is also included perspectives from the fields of regulatory, sensory, chemistry, biology, pharmacology, bacteriology, psychology, economics and marketing. In a field, where much of the knowledge is gained by experience, or handed down from mentor to apprentice, often times ideologies and concepts are very personal and empirical. Thus in regard to applications and characteristics, many comments reflect those of the author. At the same time, the reader is urged to reflect his or her own personality and input into interpretation and development of flavor applications. This Dictionary will be useful to food scientist, flavor chemists, food and beverage production personnel, management and marketing personnel, and all those concerned with the flavor of foods and beverages.

Available in PDF, EPUB and Kindle. Book excerpt: Alphaherpesviruses are a fascinating group of DNA viruses that includes important human pathogens such as herpes simplex virus type 1 (HSV-1), HSV-2, and varicella-zoster virus (VZV): the causative agents of cold sores, genital ulcerous disease, and chickenpox/shingles, respectively. A key attribute of these viruses is their ability to establish lifelong latent infection in the peripheral nervous system of the host. Such persistence requires subversion of the host's immune system and intrinsic antiviral defense mechanisms. Understanding the mechanisms of the immune evasion and what triggers viral reactivation is a major challenge for today's researchers. This has prompted enormous research efforts into understanding the molecular and cellular biology of these viruses. This up-to-date and comprehensive volume aims to distill the most important research in this area providing a timely overview of the field. Topics covered include: transcriptional regulation, DNA replication, translational control, virus entry and capsid assembly, the role of microRNAs in infection and oncolytic vectors for cancer therapy. In addition there is coverage of virus-host interactions, including apoptosis, subversion of host protein quality control and DNA damage response pathways, autophagy, establishment and reactivation from latency, interferon responses, immunity and vaccine development. Essential reading for everyone working with alphaherpesviruses and of interest to all virologists working on latent infections.
