Book excerpt: Excerpt from Grape Vinegar With the ever increasing extension of the grape-growing industry in California it is desirable that every possible profitable outlet for the crops should be utilized. One important outlet which at present is but incompletely utilized is the manufacture of high class vinegar. Many grapes which are unsuitable for drying, shipping, or wine making can be turned into excellent vinegar. Vinegar of high quality is in fact so rare and so difficult to procure that this may be the most profitable use, in some cases, to which even the best grapes can be put. Wine vinegar, however, can not, even under the most favorable condi tions, compete in cheapness with vinegar made from distilled alcohol or the numerous waste products which at present are the source of the main bulk of the vinegar found in commerce. Good wine vinegar is as costly to make as good wine and more costly than poor. It can be sold at a profit, therefore, only at a price comparable with that of good wine, which is considerably higher than that of ordinary vinegar. Bioletti was the first chair of the Department of Viticulture and Enology and founded the grape breeding program at the University of California Agricultural Experiment Station. Book excerpt: Excerpt from Vinegars and Catsup: Interpretation of Standards, Analysis, Etc Vinegar is essentially a dilute solution of acetic acid, but it must be remembered that it is the product of a definite fermentation, con taining appreciable quantities of certain solid and liquid substances derived from the material thus fermented, and that a solution of acetic acid (as purchased in the chemical market) re duced to proper strength can only be considered as an imitation spirit vinegar, at the best. And as an imitation of a good spirit vinegar it would be a very poor makeshift. The constituents other than acetic acid which are present, as well as the characteristic flavor, etc., of a true vinegar depend, of course, upon the nature of the material-which has been fer mented into vinegar. The four principal vine gars in use at present are: Wine vinegar, result ing from the alcoholic and subsequent acetous fermentations of grape juice; cider vinegar from properly fermented pure apple cider; maltvinegar from the alcoholic and subsequent acetous fermentation of an undistilled infusion of barley malt or cereals whose starch has been converted by maIn some countries a certain vinegar is often so extensively used, or was so exclusively used originally, as to restrict the simple term, vine gar, to that particular variety, as, for example, malt vinegar in England, or wine vinegar in Continental Europe. In the United States the only vinegar known for years was cider vinegar, and among food inspection authorities it has always been customary to hold that when the consumer simply asks for vinegar, cider vine gar is called for and should be furnished by the dealer. Thus the Federal food standards (cir cular 19, Office of Secretary, U. S. Department of Agriculture) restricts the single term vinegar to indicate cider vinegar. The writer obtained from 5 acres, gallons, or 847 gallons per acre. In some parts of the country, the crop was shortened by the rot, and in many vineyards by careless cultivation; so that the average yield for the whole county did not exceed 400 gallons to the acre. In culture, nothing new has been discovered within the last year. A light dressing of ashes, turned in with the first Spring hoeing or ploughing, is still thought to be a valuable application, to correct acidity in the soil and in the grape. This method of pasteurization is discussed more fully in Circular 31314 and Extension Circular Pasteurization also may be accomplished by heating the vinegar in bulk to 140° F, cooling to 7 0° F, and then bottling. Pasteuriza tion is usually not practiced except in large factory-scale operations. It is usually dispensed with in the farm-scale manufacture. Book excerpt: Excerpt from Utilization of California Fruits Shear (see footnote 3, p. 1) has prepared the statistics given in table 1 to indicate in a general manner the present outlets for California fruits. The total quantity of oranges used commercially for processed prod ucts, according to Shear, was tons a year for the period 1934 1938. About tons of this total are canned as juice, the average for the period in question being about cases annually. A consider able tonnage is utilized for bottler's sirups, orange concentrate, and dairy-base sirups, Some oranges are used for essential oil and for dried stock feed. An unknown quantity is not utilized in any manner and is dumped on the cull heaps in the citrus areas. The above uses comprise a relatively small proportion of the total orange production. It must be remembered, however, that a very large proportion, probably more than 50 per cent, of the oranges sold fresh are used in juice stands, restaurants, in the home, and elsewhere, for juice consumed fresh. Grapes designated otherwise processed in table 1 are those crushed commercially for wine. Practically all of the wine grapes shipped fresh, namely, tons annually for the 1984 - 1938 period, were utilized for the making of wine in the home. Most of the table and raisin grapes otherwise processed were crushed for wine. Most of the apples otherwise processed were utilized for fresh juice and vinegar, small amounts being utilized for hard cider, brandy, apple wine, boiled cider, and apple butter. Most of the tons of cherries otherwise processed were barreled in brine containing sulfur dioxide and lime. These were utilized for preparation of Maraschino cherries, principally for addition to canned fruits for salad and canned fruit cocktail. With the exception Of 1939, all of the apricots grown were harvested; Shear estimates that about tons were not picked in 1939.
