The removal of the sul furous acid is incomplete and troublesome. Juice containing sulfurous acid is corrosive and attacks both copper and silver, necessitating the use of glass-lined or Monel metal or other resistant vacuum pans. For these reasons it is strongly advised that vacuum pans of sufficient size be installed to concentrate 'the juice from the grapes as rapidly as they are received; thus avoiding the necessity of using sulfurous acid.
