Quinoa is an ancient crop native to the Andean region of South America that has recently gained international attention because its seeds are high in protein, particularly in essential amino acids. Quinoa is also highly tolerant of abiotic stresses, including drought, frost and salinity. For these reasons, quinoa has the potential to help address issues of food security – a potential that was recognized when the United Nations declared 2013 the International Year of Quinoa. However, more effort is needed to improve quinoa agronomically and to understand the mechanisms of its abiotic stress tolerance; the recent development of genetic and genomic tools, including a reference genome sequence, will now help accelerate research in these areas.

Book excerpt: Grain legumes, together with quinoa and amaranth (pseudocereals) and other crops are attractive candidates to satisfy the growing demand for plant protein production worldwide for food and feed. Despite their high value, many protein crops have not been adequately assessed and numerous species are underutilized. Special attention has to be paid to genetic diversity and landraces, and to the key limiting factors affecting yield, including water deficiency and other abiotic and biotic stresses, in order to obtain stable, reliable and sustainable crop production through the introduction and local adaptation of genetically improved varieties. Legumes, the main protein crops worldwide, contribute to the sustainable improvement of the environment due to their ability to fix nitrogen and their beneficial effects on the soil. They play a key role in the crop diversification and sustainable intensification of agriculture, particularly in light of new and urgent challenges, such as climate change and food security. In addition, the role of legumes in nutrition has been recognized as a relevant source of plant protein, together with other benefits for health. Chapters dealing with common bean, lupine, soybean, lentil, cowpea and Medicago are included in this book. Most contributions deal with legumes, but the significant number of papers on different aspects of quinoa gives an idea of the increasing importance of this protein crop. Pseudocereals, such as quinoa and amaranth, are good sources of proteins. Quinoa and amaranth seeds contain lysine, an essential amino acid that is limited in other grains. Nutritional evaluations of quinoa indicate that it constitutes a source of complete protein with a good balance among all of the amino acids needed for human diet, and also important minerals, vitamins, high quality oils and flavonoids. Other protein crops also included in this book are hemp, cotton and cereals (maize, wheat and rice). Although cereals protein content is not high, their seeds are largely used for human consumption. In this book are included articles dealing with all different aspects of protein crops, including nutritional value, breeding, genetic diversity, biotic and abiotic stress, cropping systems or omics, which may be considered crucial to help provide the plant proteins of the future. Overall, the participation of 169 authors in 29 chapters in this book indicates an active scientific community in the field, which appears to be an encouraging reflect of the global awareness of the need for sustainability and the promising future of proteins crops as a source of food and feed.

Book excerpt: Quinoa (Chenopodium quinoa Willd.) is a staple grain for the indigenous people of the Andean region of South America with excellent nutritional qualities, including protein content. The objective of this study is to report on the development of fluorescence-tagged simple sequence repeats (SSRs) and single nucleotide polymorphisms (SNPs) to (1) genetically characterize the inherent diversity of 152 accessions of C. quinoa; (2) determine to what degree the CIP-FAO collection represents the range of genetic diversity in quinoa; and (3) test four hypotheses regarding quinoa?s center of diversity, Highland and Lowland clustering patterns, origin of Lowland varieties, and the origin of domestication. Thirty-five SSR loci comprising 432 alleles ranging from 5 (QAAT10) to 28 (QAAT50) alleles per locus (mean=13) were used to survey the 152 accessions of quinoa from the USDA and CIP-FAO collections. Heterozygosity was detected in 14.25% of the accessions for SNP loci and in at least one locus for 51% of the accessions. Both UPGMA and PCA analyses partitioned the quinoa accessions into two main clusters. The first major cluster consisted of accessions from the Andean highlands of Peru, Bolivia, Ecuador, Argentina, and extreme northeastern Chile. The other main cluster contained accessions from both the Lowlands of Chile and those collected by Emigdio Ball?? The CIP-FAO collection appears to give a good representation of quinoa?s genetic diversity within these two main clusters. The significance of patterns of genetic diversity within C. quinoa is discussed.

However, successful adoption and market integration relies on crop quality. To facilitate breeding, this dissertation focused on developing and implementing systems that expand phenotyping capacity and support investigation of various factors influenceing quinoa and malting barley end-use quality.Quinoa is a pseudocereal with vast genetic diversity and adaptability, and contains all nine of the essential amino acids. In a study of Washington-grown quinoa, we identified limiting amino acid content and provide evidence for possible genotype-by-environment interactions influencing nutritional quality. Development of high-throughput phenotyping system supported end-use quality phenotyping of a quinoa world core collection for 38 seed composition and morphology traits. A greenhouse trial provided a characterization of the collection and captured considerable phenotypic variation. A genome-wide association study (GWAS) of end-use quality traits for 258 diverse accessions found marker-traits associations (MTAs) associated with numerous traits with varying effect sizes. In both studies, we identified amino acid content provide detailed phenotypes, heritability values, insights into population structure, and correlations between end-use quality traits. Improvements to yield must be made while simultaneously monitoring seed composition, to avoid selecting against nutritional quality in pursuit of higher yields.The influence of barley genotype on malt and beer quality and flavor is gaining attention. A consumer panel investigated the relationships between hot steep malt, an emerging sensory method, and single-malt beer sensory, and identified genotype effects on beer flavor, distinctive flavor profiles, and influences of consumer demographics and consumption patterns on beer liking. A sensory study at a Brewfest using locally grown, malted, and brewed barley, explored differences between advanced barley breeding lines and a control using two different sensory methods. Variability in grain protein content impacted malting at scale, altered malt quality, and consumers perceived impacts on beer flavor. Using samples from the WSU and University of Idaho spring barley variety trails, we found evidence of genotype-by-environment interactions on malt quality and identify genotypes with superior malt quality for adjunct and all malt brewing.These studies advance the understanding of quinoa and malting barley end-use quality and provide strategies for germplasm improvement.
