Book excerpt: Phytochemists are aware that their focus of interest is receiving attention from a wider segment of society and from a greater diversity of disciplines within the scientific community than ever before. Nonetheless, they were bemused to learn three years ago that "until recently scientists didn't even know phytochemi cals existed" (Newsweek, April 24, 1994). Changing public perception of the positive contributions of phytochemicals to human well-being has foundations in scientific advances. With popular reports emphasizing the important implica tions of phytochemicals in the daily lives of people, there is a pressing need for those working in this area to explain their diverse scientific activities to the public. Chemicals from plant foods are linked through epidemiological and ex perimental studies with reduced incidence of chronic degenerative diseases. Phytomedicines, standardized according to particular constituents, are making increasing contributions to health care. Naturally occurring constituents of plants are recognized as fundamental to the appeal, quality, and marketability of food products. In light of such developments, perceptions by phytochemists of their own discipline and its applications are expanding. Until recently, food phyto chemistry largely implied food toxicants. Food plants were familiar, but seldom the source of novel economically important compounds. Increasingly sophisti cated methods of analysis, however, have opened new opportunities for under standing the nature and functions offood constituents, and for manipulating them to improve the quality, acceptability, and value of food products.

Book excerpt: Progress in wood chemistry has been related mainly to chemical wood pulping and bleaching and chemical utilization of wood and wood extractives. Meth ods of wood analysis were developed by Schorger (proximate analysis in 1917) and Dore (summative analysis in 1919), and standard methods based on Schorger's method, e.g., TAPPI standards (Technical Association of the Pulp and Paper Industry), have been widely used for chemical analysis of woods in many countries. Thus it is generally known that wood is composed of about 50% cellulose, 20-35% of lignin, 15-25% of hemicelluloses, and variable amounts of extractives. Chemical characterization and efficient utilization of these wood components have been studied in laboratories of wood chemistry and technology in universities and government institutions. In the last decade, biochemistry and molecular biology of microorganisms, animals, and plants have greatly progressed. At the same time wood has been recognized as a unique renewable ecomaterial produced by trees using solar energy. In addition, many desirable properties of wood and wood components as biomaterial that affects physiology and psychology in humans have recently attracted attention.

A brief history of the Society is presented in Chapter 12 by Stewart Brown, one of the original founders of the Society. We dedicate this volume to Hans Grisebach, 1926-1990, Professor of Biochemistry at the Biologisches Institut II, Freiburg, Germany, where he headed for many years a laboratory responsible for major advances in the area of phenolic metabolism; this will be self evident from the numerous bibliographical references cited in the literature for papers by his Freiburg group from about 1958 until now, and subsequently by former students and colla borators. Now, however, the introduction of molecular methods, coupled with genetic transformation technology, has provided a change in pace, and fundamental advances are occurring rapidly. This volume, the second in our Plant Biotechnology series, shows how we are beginning to understand the molecular basis of plant growth and development, and are thus moving from the descriptive to the predictive stage. The ability, discussed in chapter one, to generate a fivefold change in plant height by overexpression of a single gene for the photoreceptor phytochrome heralds not only a new phase in plant photobiology but also highlights the close relationship between fundamental knowledge and commercial application. Other chapters review progress in our understanding of the molecular basis of hormone action and processes such as tuber development, seed protein synthesis and deposition, fruit ripening, and self-recognition during pollination. The successful uses of antisense genes to alter the colour and pattern of flowers and to change the enzymic composition of ripening fruit are also discussed, together with identification and down regulation of a gene involved in ethylene synthesis by antisense technology. Opportunities are considered for altering the composition and quality of harvested plant organs and for using plants to synthesise novel products.
