Book excerpt: The objective of this research was to determine if serum components and ultrasound measurements at weaning, and certain genetic markers could accurately predict growth, carcass characteristics and palatability of products in beef cattle. Forty-six crossbred steers were weaned, blood samples collected and ultrasound measurements recorded. Calves were kept in a backgrounding phase for 135 d, receiving ad libitum tall fescue, and supplemented 1.8 kg/d corn:soybean meal ration. Calves were weighed every 28 d throughout the background and feedlot phases. Calves were finished for 136 d until harvest, and data were collected after a 24 h chill. Serum components and ultrasound measurements at weaning accurately predicted carcass composition. However, serum components failed to accurately predict palatability characteristics. Genetic markers for lactate dehydrogenase and prolactin were associated with serum components and feedlot gain. Activities of LDH were useful in predicting muscle and fatty acid composition.
