Book excerpt: The objectives of the study were to assess fruit and vegetable intake of 6th to 8th grade youth in low-income areas, assess their food environment, and determine factors that influenced fruit and vegetable consumption. Sixth to eighth grade youth from two low-income communities in each of the three states of South Dakota, Kansas and Ohio were involved in the study. Fruit and vegetable intake was measured using the National Cancer Institute (NCI) fruit and vegetable screener tool. The food environment was measured using the Nutrition Environment Measures Survey for Restaurants (NEMS-R) and the Nutrition Environment Measures Survey for Stores (NEMS-S) tools. A generalized linear mixed model in PROC GLIMMIX was used to assess possible predictors of fruit and vegetable intake. Average daily fruit and vegetable consumption for males and females was 3.8 cups (95%CI= 2.4-6.0) and 3.1 cups (95%CI=2.0-4.9) respectively. Grade, gender, ethnicity, community, and state of residence did not influence fruit and vegetable consumption, while fruit and vegetable availability at home influenced intake. Youth had a favorable view of their food environment, contrary to the findings of objective measures.

Book excerpt: Facilitating healthy eating among young people, particularly among minorities who are at high risk for gaining excess weight, is at the forefront of the current policy discussions in the U.S. We investigate the effects of social interactions and relative prices on fruit and vegetable consumption by African American youths. We estimate a simultaneous equation ordered probit model of food intake using rich behavioral data from the Family and Community Health Study and price data from the Economic Research Service's Quarterly Food-at-Home Price Database. We find the presence of endogenous effects between a youth and parent, but not between a youth and friend. Lower relative prices of fruits and vegetables tend to increase intakes. Results suggest that health interventions targeting only one family member may be a cost-effective way to increase fruit and vegetable intake by African Americans because of the existence of "spillover" consumption effects between the youths and their parents.

Book excerpt: Childhood obesity and obesity-related diseases are major problems in the United States and disproportionately affect Hispanic youth and children from low socioeconomic status households. This population has limited access to fresh fruits and vegetables, and consumption of fruits and vegetables have been shown to prevent weight gain and may reduce the risk of obesity. Current literature shows that cooking and gardening are associated with increased fruit and vegetable preferences and intake. School cooking and gardening programs show promise in improving dietary intake in children. The purpose of this cross-sectional research was to identify associations between cooking and gardening behaviors and determinants of behavior (attitudes, self-efficacy, and motivation) and subsequent fruit and vegetable intake in low-income, minority youth who participated in school-based cooking and gardening interventions. The first aim was to examine the association between changes in cooking and gardening behaviors and determinants of behavior with changes in dietary fiber intake, vegetable intake, body mass index (BMI), and waist circumference in participants of the LA Sprouts randomized controlled intervention. The second aim was to examine the baseline relationship between child cooking involvement and parental support in food preparation with vegetable exposure, vegetable preference, vegetable intake, and BMI from participants of the Texas! Grow! Eat! Go! group-randomized controlled intervention. The third aim was to examine the baseline relationship between cooking and gardening behaviors and determinants of behavior (attitudes and self-efficacy) with fruit and vegetable intake in participants of the TX Sprouts randomized controlled intervention. All analyses were conducted using data from primarily low-income and Hispanic youth. The results of this research demonstrated that cooking and gardening behaviors and determinants of behavior are positively associated with fruit and vegetable intake in this population, suggesting that improving cooking and gardening skills and determinants of behavior in children through school cooking and gardening programs may be an effective means to improve their dietary intake.

Book excerpt: Adolescent fruit and vegetable intake (FVI) remains below the national dietary recommendations, creating a public health dilemma as a diet high in fruit and vegetables is known to be protective against both chronic disease and depression. The theoretical frameworks utilized in this paper include the prevention science framework and ecological systems theory. The purpose of this paper is to investigate individual and family level characteristics and behaviors associated with Latinx adolescent FVI.A secondary analysis was performed using data from 10th grade students living in Washington state who completed the 2018 Healthy Youth Survey. The factors that will be examined in relation to fruit and vegetable intake in this paper include sex, body mass index (BMI), dietary behaviors, physical activity, screen time, acculturation, maternal education, and low-income. Non-Latinx adolescents were used as a comparison group. Separate bivariate correlations were performed between FVI and the independent variables for each group. An independent t-test was also performed to examine differences in FVI among both groups. Separate multiple logistic regressions were conducted to determine which of the variables predicted meeting FVI recommendations for each group.Among non-Latinx White (NLW) adolescents all of the individual level behaviors were significantly correlated with FVI, but for Latinx adolescents only aerobic and muscle-strengthening activity were significantly correlated with FVI. NLW adolescents' (M=3.02, SD=1.51) FVI significantly differed compared to Latinx adolescents' (M=2.91, SD=1.55). The multiple logistic regressions revealed both groups had similar factors that predicted meeting FVI recommendations, but differed among a few of the factors (e.g., frequent family meals, screen time).Continuing to investigate the factors associated with Latinx adolescent FVI is vital to inform the design of culturally responsive nutrition education interventions and should remain a public health priority. Ultimately, environmental and policy level strategies are needed to increase accessibility and affordability of fresh fruits and vegetables to increase the number of adolescents' meeting FVI recommendations.

Some proposals suggest that a price subsidy for those products would encourage low-income Americans to consume more of them. This study estimated that a 10-percent subsidy would encourage low-income Americans to increase their consumption of fruits by 2.1-5.2 percent and vegetables by 2.1-4.9 percent. The annual cost of such a subsidy for low income Americans would be about $310 million for fruits and $270 million for vegetables. And most would still not meet Federal dietary recommendations.

The food industry is the largest sector of our economy; food touches everything from our health to the environment, climate change, economic inequality, and the federal budget. From the earliest developments of agriculture, a major goal has been to attain sufficient foods that provide the energy and the nutrients needed for a healthy, active life. Over time, food production, processing, marketing, and consumption have evolved and become highly complex. The challenges of improving the food system in the 21st century will require systemic approaches that take full account of social, economic, ecological, and evolutionary factors. Policy or business interventions involving a segment of the food system often have consequences beyond the original issue the intervention was meant to address. A Framework for Assessing Effects of the Food System develops an analytical framework for assessing effects associated with the ways in which food is grown, processed, distributed, marketed, retailed, and consumed in the United States. The framework will allow users to recognize effects across the full food system, consider all domains and dimensions of effects, account for systems dynamics and complexities, and choose appropriate methods for analysis. This report provides example applications of the framework based on complex questions that are currently under debate: consumption of a healthy and safe diet, food security, animal welfare, and preserving the environment and its resources. A Framework for Assessing Effects of the Food System describes the U.S. food system and provides a brief history of its evolution into the current system.
