Book Service Included

Download or read book Service Included written by Phoebe Damrosch and published by Harper Collins. This book was released on 2009-10-13 with total page 244 pages. Available in PDF, EPUB and Kindle. Book excerpt: A head server at a renowned NYC restaurant dishes out stories and trade secrets from the world of fine dining in this behind-the-scenes memoir. While recent college grad Phoebe Damrosch was figuring out what to do with her life, she supported herself by working as a waiter. Before long she was a captain at the legendary four-star restaurant Per Se, the culinary creation of master chef Thomas Keller. Service Included is the story of her experiences there: her obsession with food, her love affair with a sommelier, and her observations of the highly competitive and frenetic world of fine dining. Along the way, she provides insider dining tips, such as: Never ask your waiter what else he or she does. Never send something back after eating most of it. Never make gagging noises when hearing the specials—someone else at the table might like to order one.

Available in PDF, EPUB and Kindle. Book excerpt: A lady desiring vengeance seeks a highwayman’s help in this tale by an author whose novels are “the gold standard in historical romance” (Lisa Kleypas). Lady Leigh Strachan’s father governed the town of Felchester—until a religious zealot murdered her family and turned the village into hell on Earth. Now, there is room in her heart for only one thing: revenge. Leigh plans to kill her father’s murderer once she learns to aim a pistol, slash a sword, and ride a horse. She seeks out the Prince of Midnight, a legendary highwayman exiled to France, as her choice of tutors. But the man she finds in a crumbling French castle is no hero. Half deaf and suffering from vertigo, S. T. Maitland can scarcely walk, much less wield a sword atop a dancing stallion. Yet for reasons she can’t explain, she remains with him, steeling her heart against the sight of his gold-streaked hair, green eyes, and brows adorned with a devilish curl at the arch . . . Women mean nothing but trouble to the highwayman, so he wishes Leigh were less alluring. Alas, she is beautiful, with a piercing gaze and a determined spirit. Despite his broken balance, the loss of his horse, and the price on his head, he vows to return to England with her. He cannot resist the challenge—or the chance to sacrifice everything for love . . . The New York Times–bestselling author of Flowers from the Storm and Shadowheart, Laura Kinsale writes an “unfailingly brilliant and beautiful” romance (Julia Quinn).

  • Author : James T. Hamilton
  • Publisher : Princeton University Press

Download or read book Channeling Violence written by James T. Hamilton and published by Princeton University Press. This book was released on 2021-04-13 with total page 412 pages. Available in PDF, EPUB and Kindle. Book excerpt: "If it bleeds, it leads." The phrase captures television news directors' famed preference for opening newscasts with the most violent stories they can find. And what is true for news is often true for entertainment programming, where violence is used as a product to attract both viewers and sponsors. In this book, James Hamilton presents the first major theoretical and empirical examination of the market for television violence. Hamilton approaches television violence in the same way that other economists approach the problem of pollution: that is, as an example of market failure. He argues that television violence, like pollution, generates negative externalities, defined as costs borne by others than those involved in the production activity. Broadcasters seeking to attract viewers may not fully bear the costs to society of their violent programming, if those costs include such factors as increased levels of aggression and crime in society. Hamilton goes on to say that the comparison to pollution remains relevant when considering how to deal with the problem. Approaches devised to control violent programming, such as restricting it to certain times and rating programs according to the violence they contain, have parallels in zoning and education policies designed to protect the environment. Hamilton examines in detail the microstructure of incentives that operate at every level of television broadcasting, from programming and advertising to viewer behavior, so that remedies can be devised to reduce violent programming without restricting broadcasters' right to compete.

Download or read book Dessert FourPlay written by Johnny Iuzzini and published by Clarkson Potter. This book was released on 2010-10-20 with total page 513 pages. Available in PDF, EPUB and Kindle. Book excerpt: Consider the strawberry: its familiar flavor and texture; its fresh, sweet smell. Now imagine the same fruit distilled and carbonated for a refreshing soda, slow-roasted for a reinvented strawberry shortcake, made into a creamy strawberry ice cream and a chewy strawberry leather, and combined with coconut cream and crisp chocolate pastry. Alone, each dessert is a taste of paradise, but together this “fourplay,” or tasting, created by Johnny Iuzzini, superstar pastry chef of the celebrated four-star restaurant Jean Georges in New York, is a sophisticated explosion of a familiar flavor that begins with the taste of strawberry rich on your tongue and ends with an effervescent tingle in your nose. Far from the conventional slice of cake at the end of a meal, Johnny’s seasonal creations—four mini desserts in a quartet of complementary flavors and textures—are a culinary adventure. In Dessert FourPlay, he shares his secrets and inspirations, delivering standout recipes for incredible desserts that can be served alone or combined into his signature fourplay groupings, creating the perfect sweet finale for any meal. With the home cook in mind, Johnny offers tips on simplifying professional recipes and provides basic recipes for transcendent cakes, cookies, tuiles, ice creams, sorbets, granités, and more. These building blocks can be used to create magnificent multifaceted desserts, or they can be perfect desserts by themselves. Some recipes have surprising versatility: the shiny smooth chocolate glaze Johnny uses to ice cakes doubles as the ultimate hot fudge sauce; a lemony madeleine batter becomes a layer in a cake. Iuzzini pairs cool with hot, crispy with creamy, sweet with spicy, and the expected—chocolate, strawberries, and cinnamon—with the unexpected—chiles, beets, and chocolatey puffs. The result: desserts that refresh, inspire, and satisfy beyond expectations. Dessert FourPlay invigorates all the senses and inspires home cooks to create innovative desserts of their own.
