The Kenya Food Composition Tables [FCT] (2018) was developed following international guidelines from INFOODS considering all the required quality checks. It has three main sections: the first part of the book contains an introduction and user notes; the second section presents the actual food composition tables; the third section features photographies and descriptions of foods, to facilitate food identification. This publication will guide both county and national authorities in setting priorities in the implementation of food-based approaches to reduce the burden of malnutrition in the population and support nutrition-sensitive agricultural production.

Book excerpt: Consumption of fruits and vegetables is important for maintaining good health and preventing chronic disease; Kenyans consume too little of these foods relative to dietary recommendations. Contaminated fruits and vegetables are an important conduit of foodborne disease (FBD), which represents a significant share of the global burden of disease, particularly in Africa. Improving the safety of fruits and vegetables and increasing their consumption are both important for improving population health. Concern about food safety is high among consumers who shop at supermarkets and specialty grocery stores in Nairobi, and prices for fruits and vegetables in these outlets far above those observed in open-air markets. This suggests significant potential for farmers to benefit economically from the production of safe, high-quality produce if credible certification systems can be developed. The FBD burden, as well as premium market opportunities for horticultural producers, are set to continue to increase in Kenya as a burgeoning middle class demands a more diversified and nutritious diet. Risk of FBD can be reduced at every stage, from farm to fork. Increasing awareness among farmers, processors, retailers, and consumers is thus a critical step toward safer food in Kenya The Kenyan government has laid out a comprehensive set of actions to improve food safety in the 2013 National Food Safety Policy, but these have yet to be implemented. Many of these interventions could be taken up by county governments. Success by KEPHIS in the enforcement of regulations in crops destined for export demonstrate the potential for public action to improve food safety in Kenya, and should be emulated in the domestic market.

Book excerpt: This richly drawn ethnography of Samburu cattle herders in northern Kenya examines the effects of an epochal shift in their basic diet-from a regimen of milk, meat, and blood to one of purchased agricultural products. In his innovative analysis, Jon Holtzman uses food as a way to contextualize and measure the profound changes occurring in Samburu social and material life. He shows that if Samburu reaction to the new foods is primarily negative--they are referred to disparagingly as "gray food” and "government food”--it is also deeply ambivalent. For example, the Samburu attribute a host of social maladies to these dietary changes, including selfishness and moral decay. Yet because the new foods save lives during famines, the same individuals also talk of the triumph of reason over an antiquated culture and speak enthusiastically of a better life where there is less struggle to find food. Through detailed analysis of a range of food-centered arenas, Uncertain Tastes argues that the experience of food itself--symbolic, sensuous, social, and material-is intrinsically characterized by multiple and frequently conflicting layers.
