Book excerpt: The purpose of the project has been to identify how date labelling legislation on food is practised in Denmark, Finland, Norway and Sweden and how the durability can be affected in the food supply chain. The project recommends enhanced guidance for manufacturers, retailers and consumers. When prolonging the durability of the product, the retail waste decreased significantly. The results show that the type of packaging gas and storage temperature is of great importance for the durability of food products. Consumer studies reveal a need for guidance on how long products may be eaten after opening of the package. The individual consumer needs clearer and more easily accessible information on different labelling, storage temperature and durability of products.

This publication is based on the project report Food waste and date labelling: Issues affecting the durability. Mappings undertaken has led to recommendations on restricted use of Use by- labelling, on harmonization for lower storage temperatures for perishable products, on oxygen free packaging for fresh meat and on the need for guidance on date labels to reach out better among stakeholders and consumers. A Nordic standpoint is that date labelling of eggs should be regulated like any other food.

Book excerpt: Approximately 30 percent of the edible food produced in the United States is wasted and a significant portion of this waste occurs at the consumer level. Despite food's essential role as a source of nutrients and energy and its emotional and cultural importance, U.S. consumers waste an estimated average of 1 pound of food per person per day at home and in places where they buy and consume food away from home. Many factors contribute to this wasteâ€"consumers behaviors are shaped not only by individual and interpersonal factors but also by influences within the food system, such as policies, food marketing and the media. Some food waste is unavoidable, and there is substantial variation in how food waste and its impacts are defined and measured. But there is no doubt that the consequences of food waste are severe: the wasting of food is costly to consumers, depletes natural resources, and degrades the environment. In addition, at a time when the COVID-19 pandemic has severely strained the U.S. economy and sharply increased food insecurity, it is predicted that food waste will worsen in the short term because of both supply chain disruptions and the closures of food businesses that affect the way people eat and the types of food they can afford. A National Strategy to Reduce Food Waste at the Consumer Level identifies strategies for changing consumer behavior, considering interactions and feedbacks within the food system. It explores the reasons food is wasted in the United States, including the characteristics of the complex systems through which food is produced, marketed, and sold, as well as the many other interconnected influences on consumers' conscious and unconscious choices about purchasing, preparing, consuming, storing, and discarding food. This report presents a strategy for addressing the challenge of reducing food waste at the consumer level from a holistic, systems perspective.

This represents nearly $218 billion dollars’ worth of food entering landfills every year, causing food waste to be one of the largest contributors to climate change. Consequently, the IPCC (Intergovernmental Panel on Climate Change) has stated food waste reduction as a climate change mitigation priority and cited streamlining date labels on food packages as one solution. Most of the food waste in the U.S. originates in consumer households due to the presence on confusing date labels intended to depict shelf-life. However, since date labels are static, they are unable to consider the effect of temperature fluctuations on food quality, and food manufacturers tend to be extremely conservative when setting the date horizons. This causes good quality food to be thrown out by consumers. To add to the confusion, no standardized date labeling system exists in the U.S. causing multiple phrases such as “sell by”, “use by”, “best if used by” etc. to be used on food packages. Recent recommendations have suggested a move to a standardized label phrase across all products - “best if used by”, but the effectiveness of this solution is unknown. The overall objective of this research was to investigate two food waste prevention solutions – date label standardization and real-time shelf-life monitoring, specifically for packaged milk - one of the highly wasted food products. The effect of date label standardization, consumer education and product age on consumer discard intentions were evaluated through an in-person consumer study with 437 participants. In most cases, changing label phrases to “best if used by” had no significant effect on discard intentions. The printed date had the strongest effect, increasing discard by 40 percentage points between 2-days pre-date and 7-days post-date milk.

Chapter 1 examines (1) the relationship of older adults' nutrition to health outcomes and the extent to which federal nutrition guidelines address older adults' nutritional needs, (2) nutrition requirements in federal nutrition assistance programs serving older adults and how these requirements are overseen, and (3) challenges program providers face in meeting older adults' nutritional needs.The U.S. Department of Agriculture (USDA) and Food and Drug Administration (FDA) have taken steps to address consumer confusion about date labels on packaged foods. For example, to reduce confusion about introductory phrases on date labels, such as whether the dates indicate food is safe to eat, and resulting food waste, USDA in December 2016 issued a fact sheet on date labels for consumers. Chapter 2 describes the steps USDA and FDA have taken to address consumer confusion about date labels and examines the extent to which USDA and FDA have coordinated with each other and with nonfederal stakeholders on date labels.Chapter 3 reports on the challenges that exist to reducing food loss and waste (FLW) in the United States. Disease outbreaks from tainted food are an ongoing public health challenge. The Centers for Disease Control estimates that each year, one in six Americans, 48 million people, get sick from foodborne illnesses, 128,000 are hospitalized, and 3,000 die as reported in chapter 4.
