The main ideas of this book are derived from Kanshokufuji, a new concept proposed by the chief editor of Prof. Nanseki, pertaining to a sound food system in a sound agro-environment. It implies that food supply and demand are non-separable in terms of location due to the importance of retaining the suitable condition of the environment and biodiversity in the region. This concept is necessary and useful for coping with environmental issues and related food safety issues. From this view point, several integrated surveys in both rural and urban areas of China were conducted by the food risk research group at the Research Institute for East Asia Environments (RIEAE), Kyushu University to reveal the current status of the environment, food, and agriculture in this country. The results of the surveys are introduced in this book, along with implications and recommendations. We hope this book be referential for policy-makers, researchers and industry personnel relating to food, agriculture and environment.

Chinese scientists have developed regional optimum crop management practices and guidelines to increase crop yield and nutrient use efficiencies compared with current farming practices. Chinese agricultural soil is also currently in critical condition with severe environmental pollution. These agricultural practices need improvement to maintain sustainable food production with minimum environmental footprint. At present, the traditional mode of agricultural production in China is difficult to sustain. This book offers case studies and sustainable solutions for transforming agricultural sciences in China. The recurrence and intractability of such incidents suggest that, in addition to the imperfect supervision system, the greatest obstacle to China's food quality safety management is that China's “farm to fork” food supply chain has too many stages, the members on the supply chain have not form a stable strategic and cooperative relation, and on the other hand, during the transitional period, some practitioners lack social responsibility. Therefore, China's food quality safety management and the establishment of food quality and safety traceability system should follow the development trend of international food quality and safety supervision, and should combine with the establishment of China's agricultural industrialization and standardization, integrate China's existing but isolated effective measures, such as the establishment of bases for the implementation of the system of claiming certificates or invoices, for the performance of Management Regulations for Pig Slaughtering and Quarantine Inspection in Designated Places, and for the conduct of World Expo, as well as the establishment of market access system, take into consideration the demand, the dynamic mechanism, and the performance of important measures of food supply chain members for food quality and safety control, as well as the difficulties and the deep-seated reasons in the implementation process of such measures. This book shows how a set of social, economic, cultural, and environmental conditions have converged to shape the development of a "formal" organic sector, created by "top-down" state-developed standards and regulations, and an "informal" organic sector, created by ‘bottom-up’ grassroots struggles for safe, healthy, and sustainable food. This is generating a new civil movement focused on ecological agriculture and quality food. Organic movements and markets have typically emerged in industrialized food systems that are characterized by private land ownership, declining small farm sectors, consolidated farm to retail chains, predominance of supermarket retail, standards and laws to safeguard food safety, and an active civil society sector. The authors contrast this with the Chinese context, with its unique version of "capitalism with social characteristics," collective farmland ownership, and predominance of smallholder agriculture and emerging diverse marketing channels. China’s experience also reflects a commitment to domestic food security, evolving food safety legislation, and a civil society with limited autonomy from a semi-authoritarian state that keeps shifting the terrain of what is permitted.
