I trust, therefore, I am justified in submitting this little treatise to notice, and as I have used my best efforts to give as unbiassed an account, and as accurate and widespread a survey, as space would permit, of the principles which govern "Food and Digestion in Health and Disease," I hope it may merit some favourable attention and supply a want which I think to be needed. I have further thought well, in view of the difficulty of conveying a fairly accurate and useful knowledge of the chemical processes concerned, to include an introductory chapter which refers to the "Nature of Matter" and the "Phenomena of Life."
