Though the growth rate of the global food industry declined in recent decades the growth rate of functional food recorded at 10% to 15% per annum in the UK. Moreover, the functional foods annual turnover forecasted to reach £1.4bn in the UK in 2012. Additionally, the rate of increase in the consumption of dietary functional products is significant in the UK in recent years. In view of this significant value of functional foods in the UK market, it is important to understand the implication of external and internal influences of the consumers purchasing behaviour. Hence, this proposal addresses important issues to be discussed in the proposed research.

In these foods, elements of production, processing, marketing, agro-tourism and speciality stores are combined. Paramount above all is the link to the consumer, which requires a personal approach. At this point, one enters the field of food consumer science. This can be seen as a hybrid of two distinct sciences. On one hand, there is the 'hardware' component, i.e. the science of food. On the other hand, the 'software' component, related to the science of consumers' preferences and behaviour. In animal science, nearly all attention is given to the 'hardware' aspect. However, to build a successful business in quality food products, the 'software' aspect is essential. This publication devotes special attention to the consumer and gives insight into an area of knowledge still very much in development. It is intended to enhance understanding of the complex relationships in the route from products to consumers and offers practical solutions in this field. This publication includes review articles covering basic aspects of food consumer science and research trends in the field, and a series of country reports and articles on relevant studies related to the topic, with emphasis on Southern Europe.

Book excerpt: Background: In the last decades, the concept of functional foods has become more popular, as people expect food to help them improve or maintain their health. Therefore, many studies have been done in order to understand consumers' perceptions and motivations behind functional food consumption. The factors influencing consumers to buy functional foods are many: demographics, perceived healthiness, combination of carrier and enrichment, taste, and lifestyle are just the most important and investigated. In particular, it emerged that functional foods are differently perceived according to the country examined. It also emerged that functional foods have a controversia( double face: if from one point of view they could be a helpful innovation for keeping people healthy, from the other people may consider functional foods as a panacea for ali their problems. Purpose: The purpose of this study will be to investigate consumers' attitudes toward FFs in two different countries: Germany and Italy. By doing so, it will be possible to compare FFs consumption and perceptions in order to understand whether cultural differences have an impact on the results. In addition, respondents' attitudes toward FFs will be considered along with their Health Attentiveness, a variable resulted from the combination of both Health Consciousness and Lifestyle, with the purpose to test whether people with different lifestyle have a diverse engagement with FFs. Methodology: To answer the research question, a quantitative study will be developed. Data will be collected through an online questionnaire that will test respondents' consumption of functional foods along with their attitudes toward these products and their health attentiveness. The analysis will focus only on two European countries: Germany and Italy. The data collected will then be analyzed according to the PLS-SEM method, in order to understand the correlation between attitudes and functional food consumption. Moreover, in order to understand whether people with different health attentiveness, have a different perception of functional foods, a multi-group analysis will be employed.
