An example of new trends in food consumption has been the enormous expansion of the organic foods market. In this changing and evolving environment it has become increasingly important to better understand consumer behavior meet interests. Previous research has identified growing consumer awareness of health, diet, and disease relationships and increased interest among consumers in self-care treatments and prevention. Using diffusion of innovation theory, this study attempts to understand some of the factors associated with consumer acceptance of functional foods and their willingness to pay for these types of products. This thesis also looks closely at the importance of diet-health consciousness as an important motivation in seeking functional foods. Data collected from the 2004 edition of the Ohio Survey of Food, Agriculture, and Environmental issues is utilized in bivariate and multivariate analyses to identify the factors associated with consumer diet-health consciousness and acceptance of functional foods. Results of this study reveal a range of characteristics of diet-health conscious consumers as well as adopter of functional foods.

Additionally, the rate of increase in the consumption of dietary functional products is significant in the UK in recent years. In view of this significant value of functional foods in the UK market, it is important to understand the implication of external and internal influences of the consumers purchasing behaviour. Hence, this proposal addresses important issues to be discussed in the proposed research.

Book excerpt: Abstract: Functional foods have received increasing attention from consumers and food producers and manufacturers over the past years, yet few studies have examined economic and marketing issues that are related to foods with additional health benefits beyond basic nutrients. This dissertation consists of three papers that employ different techniques to understand consumer behavior in this domain. The first essay applies a choice experiment to examine consumer valuation of various attributes of functional foods, using a statewide mail survey. Results indicate that consumers place positive value on health benefits and ingredient naturalness. Moreover, they are willing to pay higher prices for products having these attributes. The data also reveal that taste preferences tend to vary across consumers. Individual characteristics that tend to affect preferences include age, education, and income level. Past purchase behavior for functional foods, organic foods, and natural foods also has significant influence on preferences. The second essay uses the Elaboration Likelihood Model as a theoretical framework to understand the role of health claims in consumer assessment of products. Previous research and theory related to the role of health claims in persuasive messages has portrayed health claims as having little effect on consumers' attitudes. The present research, however, suggests this conclusion may be premature. A new conceptualization of the role of health claims in persuasion is proposed. Practical significance of the laboratory studies is discussed in light of recent changes in product design as well as changes in FDA rules regarding label claims. The third essay focuses on the Food and Drug Administration (FDA)'s recently amended policy on food labeling. This policy allows different qualified levels of health claims on product labels, based on the strength of scientific evidence supporting the claims. This essay examines whether consumers understand and can differentiate between these qualified health claims. Results show that people do not perceive significant differences between the different levels of qualified claims. An additional experiment suggests that a visual aid may be an important device to help consumers understand the scientific basis supporting a claim.

Book excerpt: Marketers of food products have recently introduced a variety of "functional foods" that promise consumers improvements in targeted physiological functions. However, despite the proliferation of functional food health claims promising more than basic nutrition, little is known about consumer responses to these claims, particularly in information environments in which inconsistent information may be available about the efficacy of a particular functional ingredient. Across two studies, the authors demonstrate that consumers with lower health consciousness are particularly sensitive to conflicting information about the validity of a functional food health claim; specifically, the presentation of conflicting (versus complementary) information significantly lowers their likelihood of choosing a functional over a nonfunctional food. In contrast, consumers with higher health consciousness do not reduce their likelihood of choosing a functional food when confronted with conflicting information. The authors demonstrate that this effect is driven by a confirmatory bias to believe the functional food health claim on the part of more health conscious consumers. The authors discuss implications for the successful marketing of functional foods and for public policy makers and consumers.

Book excerpt: Recently, consumers are becoming more health-conscious and increasingly seeking healthful menu options. To understand consumers' decision-making about healthy food choices, the current dissertation explores marketing strategies that effectively promote healthy food within restaurant settings in a series of three experimental studies. Study 1 used a between-subjects experiment to investigate how expressive aesthetics influence consumer evaluations of organic food (vs. conventional food). The findings reveal that the expressive aesthetics strategy is effective for marketing conventional, non-organic food; however, such a strategy decreases consumers' purchase intention when the food is described as organic. Furthermore, an investigation into the underlying psychological mechanism uncovers that anticipated pleasure and food temptation serially mediate the impact of expressive aesthetics and food type on purchase intention. Study 2 investigated the effectiveness of assertive ad language in persuading consumers to purchase organic food. The findings indicate that restaurants advertise organic food with assertive language will lead to more favorable responses, but not conventional food. In addition, perceived brand competence is the psychological mechanism that mediates the effect of ad language on consumers' purchase intention. Study 3 further explored how pricing strategy influences consumer purchase intention toward small plates. The findings demonstrate that small plates using nonrounded pricing will lead to a higher level of purchase intention, and such iii an effect is attenuated for regular-sized food. Price fairness is the underlying mechanism explaining the pricing strategy for small plates. Theoretical and managerial contributions are discussed.

Therefore, many studies have been done in order to understand consumers' perceptions and motivations behind functional food consumption. The factors influencing consumers to buy functional foods are many: demographics, perceived healthiness, combination of carrier and enrichment, taste, and lifestyle are just the most important and investigated. In particular, it emerged that functional foods are differently perceived according to the country examined. It also emerged that functional foods have a controversia( double face: if from one point of view they could be a helpful innovation for keeping people healthy, from the other people may consider functional foods as a panacea for ali their problems. Purpose: The purpose of this study will be to investigate consumers' attitudes toward FFs in two different countries: Germany and Italy. By doing so, it will be possible to compare FFs consumption and perceptions in order to understand whether cultural differences have an impact on the results. In addition, respondents' attitudes toward FFs will be considered along with their Health Attentiveness, a variable resulted from the combination of both Health Consciousness and Lifestyle, with the purpose to test whether people with different lifestyle have a diverse engagement with FFs. Methodology: To answer the research question, a quantitative study will be developed. Data will be collected through an online questionnaire that will test respondents' consumption of functional foods along with their attitudes toward these products and their health attentiveness. The analysis will focus only on two European countries: Germany and Italy. The data collected will then be analyzed according to the PLS-SEM method, in order to understand the correlation between attitudes and functional food consumption. Moreover, in order to understand whether people with different health attentiveness, have a different perception of functional foods, a multi-group analysis will be employed.
