Download or read book Compression of Dehydrated Foods Phase i Review of Literature written by MOKHTAR M. HAMDY and published by . This book was released on 1960 with total page 27 pages. Available in PDF, EPUB and Kindle. Book excerpt: The advantages in compressing dehydrated food into blocks or bars were cited, as well as the problems which have been confronting all researchers in this field of investigation. Some of the major problems are mentioned for consideration in the experimental stage; e.g., the fragility of product, the effect of heat and compression on the final quality of the product. Success has been claimed in compressing some products (at different laboratories) such as cabbage; furthermore, disappointments were reported in the trials to compress other dehydrated products such as potatoes. The objectives of this study are to investigate the factors which affect the compression of selected dehydrated foods, and to develop techniques for compressing these food products on a pilot scale plant. Book Ultra high Compression of Dried Foods

Download or read book Ultra high Compression of Dried Foods written by R. A. Lampi and published by . This book was released on 1965 with total page 80 pages. Available in PDF, EPUB and Kindle. Book excerpt: The report covers the study of the effects of pressures as high as 120,000 psi on various dried foods. High compression did not produce any detectable chemical changes. Compressed foods became difficult to rehydrate and exhibited considerable fragmentation when hydrated. Temperature changes occuring during high compression operations were studied. The equipment used for achieving high pressures and the construction of the die are discussed. (Author).

Book Food Dehydration Drying methods and phenomena

Download or read book Food Dehydration Drying methods and phenomena written by Wallace B. Van Arsdel and published by A V I Publishing Company. This book was released on 1973 with total page 380 pages. Available in PDF, EPUB and Kindle. Book excerpt: Abstract: A comprehensive review of the principles and applications of food dehydration technology is presented to promote an understanding of the mechanisms of the drying processes and to encourage practical developments in the field. Volume 1 provides information on the physical and thermal properties of foods undergoing dehydration; the phenomena of heat and mass transfer in food, water, and air are described. The history and current status of the food dehydration industry are discussed. Kinds of drying equipment used (air, drum, and freeze dryers) and characteristics of dehydration plant operations are evaluated. Volume 2 describes the commercial dehydration of specific food commodities: potatoes, vegetables, fruits, milk, meat, eggs, juices, cereal grains, fish products, coffee and tea, soup and other dry mixes, and intermediate moisture foods. Download or read book Dehydrating Foods Fruits Vegetables Fish and Meats written by A. Louise Andrea and published by Forgotten Books. This book was released on 2015-06-25 with total page 236 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Dehydrating Foods, Fruits, Vegetables, Fish and Meats We have passed through a long and trying experimental stage of saving foods by dehydration. At last, means and methods have not only been perfected, but arc at the service of every one. Dehydration may be accomplished easily and successfully, both in the kitchen and in commercial plants, - by the bushel or by the ton, as the case may be. For several years patient and unceasing work has been done along this line in order to attain the desired results, and personally I acknowledge with grateful appreciation the kindly co-operation and suggestions from Messrs. George Hillard Benjamin, O. H. Benson, Woodford Brooks, Joseph S. Caldwell, H. C. Gore, S. C. Prescott, Lou D. Sweet, the late Waldron Williams, F. G. Wiechmann and other sincere and able investigators. Moreover, in writing upon the development of dehydration in the United States, it is only just to pay a sincere tribute to the altruistic and laudable efforts of Mrs. Oliver Harriman in behalf of this beneficent work.
