The various risk indicators for atherosclerosis are discussed and related to the theory about atherogenesis. A review of the influence of milk fat constituents and dietary proteins on serum lipids and atherosclerosis is presented. Experimental results obtained with rabbits fed on semi-synthetic diets are reported. It is shown that large amounts of butyric acid have the same effect on blood, liver and tissue lipids and fatty acids as starch. Hypercholesterolemic affects of butter oil can be mainly ascribed to its cholesterol content. The hypercholesterolemic effects of semi-synthetic diets containing saturated fats can be mainly ascribed to the use of casein as protein source. The hypercholesterolemia induced by semisynthetic diets is shown to be the consequence of decreased faecal steroid excretion. It is suggested that the different serum cholesterol levels induced by various dietary proteins are due to a redistribution of serum cholesterol to other body compartments.

The volume is divided into six major sections. Two sections deal with current aspects of lipoprotein metabolism. In Part I, we are alerted to the impact on li poprotein metabolism of structural heterogeneity within the four broad lipoprotein classes. Attention then turns to the components that orchestrate lipoprotein metab olism. Apolipoprotein identities, processing, and functions are described, as are the roles of lipid transfer proteins in plasma lipoprotein remodeling. Hepatic lipase synthesis and secretion are described. In Part II, Nobel Laureates Michael S. Brown and Joseph L. Goldstein describe mutations in the LDL receptor that reveal the functions of its various domains and point out how understanding the LDL receptor has provided a rational basis for its regulation. A discussion of the role of receptors in regulating cholesterol uptake by tissues follows, with emphasis on receptor-ligand interactions. Additional pathways for cholesterol delivery to cells are explored, as are pathways for cholesterol egress.

He was also the first to measure metabolism and to show that oxidation within the body produces heat and energy. In the two hundred years that have elapsed, the essentiality of nitrogen-containing nutrients and of proteins for growth and maintenance of tissue has been established; the ne cessity for carbohydrates and certain types of fat for health has been docu mented; vitamins necessary to prevent deficiency diseases have been identified and isolated; and the requirement of many mineral elements for health has been demonstrated. Further investigations have defined the role of these nutrients in metabolic processes and quantitated their requirements at various stages of development. Additional studies have involved their use in the possible prevention of, and therapy for, disease conditions.

Book excerpt: Entering the 1980's, coronary heart disease (CHD) still remains the major cause of death in the United States and ranks second in the world in terms of CHD mortality rates. However, CHD mortality and morbidity rates in the United States have declined significantly since the 1950's. There are many reasons for this positive and encouraging change, one of which is the increasing awareness of the importance of the role of nutrition in health and disease. Diet has been identified as an important factor contributing to hyperlipidemia in individuals and populations. Dietary modification has become a routine means of treating patients with lipid disorders. The relationship between diet and chronic disease is, however, far from simple and at the present time, needs further intensive research. Many significant advances have recently taken place in our understanding of the effect of different nutritional components on blood lipids and lipopro teins and on the initiation progression and regression of atherosclerotic proces ses. This symposium (The 19th annual meeting of the American College of Nutrition: Cardiovascular Disease and Nutrition held at Bloomington, Minn. on June 1-2, 1978) addressed many of the important questions concerning the association of diet and CRD. We have not restricted the topic to hyperlipi demia and CHD, per se but have considered cardiovascular disease in general. This monograph should be of interest to the dietitian, nutritionist, pediatric clinician, cardiologist, physicians in general, and researchers in the field of cardiovascular disease. Herbert K.
