In California alone, school gardens were found in 13% of schools in 1996 and 24% of schools in 2005 (819 and 2381, respectively). The ever increasing connection between school gardens and science, nutrition, math and biology lessons have institutionalized school gardens as a useful tool for instruction. According to the National Gardening Association (NGA), 35% U.S. households surveyed believe that school gardens should be implemented whenever possible. The research brief, Use of School Gardens in Academic Instruction (2005), indicates that barriers faced by schools that want to build a school garden include lack of time, lack of gardening knowledge of the teachers, and lack of gardening supplies. A manual that addresses such barriers could be helpful to schools to help direct them into a successful gardening experience. The creation of a school garden logistics manual will enable schools, garden coordinators, parent associations, and students to implement a garden that is individualized for their campus. The manual will give clear information on different types of gardens, garden safety considerations, and how to build and maintain a school garden.

Book excerpt: The prevalence of childhood obesity, particularly among disadvantaged children, continues to be a growing public health concern. In an effort to address this problem, the Marilyn Magaram Center at California State University, Northridge was awarded a three-year housing and urban development (HUD) grant to promote healthy lifestyle and eating behaviors among children of lower income households through the implementation of a garden-based program, nutrition education, physical activity, and physical education. The intention of this project was to develop and evaluate the manual of lesson plans that were created for both the in-class and hands-on gardening education for 1st and 2nd graders at Cohasset Elementary School located in Van Nuys, California. These lessons were evaluated using a pilot qualitative evaluation tool, which was designed to collect educators' feedback to help make the lessons more teacher centered, and fulfill California mandated academic standards for subjects like English-language arts, health, history-social science, mathematics, physical education, science, visual performing arts, and world language. The ultimate goal of this evaluation was to set the stage for the long-term sustainability of this project, which may help attain the main goal of the larger project, which was to increase children's fruit and vegetable intake, with the main objective of decreasing the prevalence of childhood obesity.
