Book Economy in the Kitchen Classic Reprint

Download or read book Economy in the Kitchen Classic Reprint written by J. F. Breazeale and published by Forgotten Books. This book was released on 2017-12-22 with total page 114 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Economy in the Kitchen It is with a feeling of apology that I use the term I so often, but in a work of this kind it is almost impossible to omit this form of expression. In the duties of our household I am not chief coo by any means. My wife is mistress of her kitchen, and in most cases I am but a helper. She has been the prime mover in this work, and we have agreed in everything except in some small details. She insists upon using a dish rag, while I think that such an article should be prohibited by law; she thinks that the harder water boils the hotter it gets, while I do not; but beyond such small differences of Opinion we have worked together harmoniously, and the reader can take it that the term I in the majority of cases is meant to mean we. I might add that I practice what I preach. I can go into a kitchen and cook as complete a dinner as almost any woman. I can make good bread, can vegetables, preserve fruits, make good butter, prepare all kinds of salads, or make mayonnaise dressing, and my little chil dren eat my cooking in preference to their mother's. Such work is my recreation and I try to do it with the same cleanliness and system that I use in making a chemical analysis. And last but not least, I can wash up the dishes and keep the kitchen clean generally. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book Economy Cook Book Classic Reprint

Download or read book Economy Cook Book Classic Reprint written by Maria McIlvaine Gillmore and published by Forgotten Books. This book was released on 2018-03-03 with total page 228 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Economy Cook Book This book is designed to take the place among recipe books that the Ford does among automobiles. It is simple, practical, economical. But back of any recipe book must come intelligent planning of the meals, for at best recipes can only be the method of making foods palatable. Much depends upon arranging menus to pro mote the greatest degree of growth and health. In the average family which consists of adults and children both groups must be considered, for upon the proper feeding of its future citizens depends the fu ture power of our Nation. Children require more food of the body-building class than grown people; more food containing protein, as meat, fish, poultry, eggs, and milk, which is most important of all. If fresh milk is not available condensed or evaporated milk should be substituted. Adults after forty require little meat. Once a day is often more than enough. Much acute indigestion, auto-intoxication, etc., would be avoided by a diet con sisting principally of meat substitutes, vegetables, and lighter foods. Of course those who lead a sedentary life require less substantial food and a. Smaller quantity of it than those who are engaged in muscular occupa tion. And with the preper planning should go regularity of serving, the same meals at the same time each day, the lighter meal at night, thorough mastication of the food, a cheerful atmosphere. It is hoped that this feature will not only offer the teacher a wide range of choice in the preparation of her course of work, but will also tend to make the book a valuable cook book for the home kitchen, after its service as a school text has been rendered. If the hygienic principles of the school cooking lesson can thus be brought into closer relationship to their later use in the home, a very real advantage will be gained. It makes no attempt to replace a good one it is rather an effort to fill up the gap between you and your household oracle, whether she be one of those exasperating old friends who mad dened our mother with their vagueness, or the newer and better lights of our own generation, the latest and best of all being a lady as well known for her novels as for her works on domestic economy - one more proof, if proof were needed, of the truth I endeavor to set forth -if somewhat tediously forgive me - in this little book that cooking and cultivation are by no means antagonis tic. Who does not remember with afiectionate admira tion Charlotte Bronte taking the eyes out of the pota toes stealthily, for fear of hurting the feelings of her purblind old servant; or Margaret Fuller shelling peas? Download or read book Practical Italian Recipes written by James B. Herndon and published by Forgotten Books. This book was released on 2017-11-17 with total page 36 pages. Available in PDF, EPUB and Kindle. Book excerpt: Practical Italian Recipes: For American Kitchens by James B. Herndon is an ideal read for people interested in cooking Italian food in their American homes and learning about the exciting history behind some of the most beloved Italian dishes. In fact, the book itself has an exciting history behind it, as it was initially printed and sold to support the families of Italian soldiers during World War I. The collaboration of American and Italian soldiers during the war led to the compilation and eventual publication of this incredible book and allowed for a watershed cultural exchange between the two groups that influence the historic appreciation for Italian food in America. The book begins with a detailed description of a typical Italian housewife, with the admonition that Italian housewives are in a unique position to teach their American counterparts a thing or two about economy in the kitchen. At the time of publication, during food restrictions and economic tariffs, economy in the kitchen was something at the forefront of every cook and chef's mind, making this book an overnight success with its target audience. The Italian housewife's secret is simple: utilize mostly vegetables (that you grown yourself) and only small cuts of the most inexpensive meats. Not only does Herndon argue that Italian cooking would save American cooks a tremendous amount of money, he also offers a considerable amount of food replacement suggestions for recipes that call for goods that, due to the war, had become rare and hard to obtain. These replacement foods, he argues, never diminish the flavor of the food and in some cases even improve upon the original menu. James B. Herndon's book Practical Italian Recipes: For American Kitchens is a wonderful resource not just for the American cook, but for cooks of all nationalities. With a fascinating history, this book provides an exciting glimpse into the hearts (and stomachs) of WWI soldiers and their kitchens. Highly recommended for readers that like to cook or eat! Book Economy in the Kitchen

Download or read book Economy in the Kitchen written by J. F. Breazeale and published by Forgotten Books. This book was released on 2015-06-15 with total page 114 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Economy in the Kitchen During the last decade the scientists of the United States Department of Agriculture, and the state experiment stations, as well as other workers along agricultural lines, have been devoting much time and thought to the needs of the American farmer. Whether or not he has availed himself of it is another question, but certain it is that at present he needs little, in the way of information on the management of his farm, that is not available, but the housewife upon the farm is not so fortunate. Although she is usually more inclined to accept good advice, and probably needs information more than her husband, she somehow does not get it. The housekeeping magazines and other periodicals are not addressed to her, and if she attempts to read a few cook books, she is likely to end up with a vague suspicion that the authors have probably never kept house, and have never even tried their own recipes. The works on domestic science fail to reach her, as the writers upon such subjects usually write to the woman with means, the housewife who can afford to buy things, and not to the woman who is obliged to do with the things which she already has on hand. They overlook the fact that probably the majority of the housewives in this country are standing upon board floors and doing their own work.
