Un agitateur à pales droites a été préféré car il favorise le retro mélange, ce qui améliore la dispersion et la stabilisation de la phase gaz. Les paramètres du procédé jouant un rôle clef lors du foisonnement sont la température, la vitesse d'agitation et le temps de séjour. Les propriétés des matières premières dépendent fortement de la teneur et du point de fusion de la matière grasse, de l'addition d'agents émulsifiants et stabilisants ainsi que du pH. Il y a une forte interaction entre paramètres procédé et propriétés physico-chimiques lors du foisonnement qui peut être décrite par un nombre de Weber (0,9 pour l'émulsion modèle et 0,3 pour le mixe de crème glacée) indépendant des conditions operatoires. Il peut être utilisé comme paramètre d'extrapolation pour le foisennement d'une formulation donnée
