Book excerpt: Attention is directed towards possible associations between nutritional variables and coronary artery disease risk factors, based on data developed during the first US National Health and Nutrition Examination Survey (1971-75). Relative body weight (weight/height-squared) was determined to be an important predictor of serum cholesterol and urate levels and of blood pressure levels, in US adults. This predictor, together with age and sex, accounted for most of the explained variance. Dietary variables (based on results from 24-hours recall or on a food frequency questionnaire) did not influence serum cholesterol or urate levels. Alcohol intakes however, correlated directly with serum urate level. Serum Ca and Mg levels and serum glutamic oxalacetic transaminase were found to be directly and independently related to serum cholesterol and urate, which were also related to each other. Other positive and negative influences on serum cholesterol and urate levels are discussed. Summarized data concerning this study are provided.
