Book excerpt: This book examines the role of fermented foods on human gut health and offers a unique contribution to this rapidly growing area of study. Fermented foods have been consumed by humans for millennia. This method of food preservation provided early humans with beneficial bacteria that re-populated the gut microbiota upon consumption. However, novel methods of production and conservation of food have led to severed ties between the food that modern humans consume and the gut microbiota. As a consequence, there has been a documented increase in the prevalence of autoimmune diseases and obesity, which has been correlated to decreased diversity of gut microbes, while infectious disorders have decreased in the three past decades. With the intention of providing a thorough overview of the relationship between fermented foods, nutrition, and health, the editors have grouped the chapters into three thematic sections: food and their associated microbes, the oral microbiome, and the gut microbiome. After an introduction dedicated to the environmental microbiome, Part I provides an overview of what is currently known about the microbes associated with different foods, and compares traditional forms of food preparation with current industrial techniques in terms of the potential loss of microbial diversity. The chapters in Part 2 explore the oral microbiota as a microbial gatekeeper and main contributor to the gut microbiota. Part 3 introduces beneficial modulators of the gut microbiome starting with the establishment of a healthy gut microbiota during infancy, and continuing with the role of probiotics and prebiotics in health preservation and the imbalances of the gut microbiota. In the final section the editors offer concluding remarks and provide a view of the future brought by the microbiome research revolution. This study is unique in its emphasis on the convergence of two very relevant fields of research: the field of studies on Lactic Acid Bacteria (LAB) and fermented foods, and microbiome research. The relationship between these fields, as presented by the research in this volume, demonstrates the intimate connection between fermented foods, the oral and gut microbiota, and human health. Although research has been done on the impact of diet on the gut microbiome there are no publications addressing the restorative role of food as microbe provider to the gut microbiota. This novel approach makes the edited volume a key resource for scientific researchers working in this field.

Classic Maya kings sponsored elaborate public rituals that affirmed their close ties to the supernatural world and their ability to intercede with deities and ancestors to ensure an adequate amount of rain, which was then stored to provide water during the four-to-five-month dry season. As long as the rains came, Maya kings supplied their subjects with water and exacted tribute in labor and goods in return. But when the rains failed at the end of the Classic period (AD 850-950), the Maya rulers lost both their claim to supernatural power and their temporal authority. Maya commoners continued to supplicate gods and ancestors for rain in household rituals, but they stopped paying tribute to rulers whom the gods had forsaken. In this paradigm-shifting book, Lisa Lucero investigates the central role of water and ritual in the rise, dominance, and fall of Classic Maya rulers. She documents commoner, elite, and royal ritual histories in the southern Maya lowlands from the Late Preclassic through the Terminal Classic periods to show how elites and rulers gained political power through the public replication and elaboration of household-level rituals. At the same time, Lucero demonstrates that political power rested equally on material conditions that the Maya rulers could only partially control. Offering a new, more nuanced understanding of these dual bases of power, Lucero makes a compelling case for spiritual and material factors intermingling in the development and demise of Maya political complexity.

In the 1990s, the international food policy community turned its focus to the "hidden hunger" of micronutrient deficiencies, a problem that resulted in two scientific solutions: fortification, the addition of nutrients to processed foods, and biofortification, the modification of crops to produce more nutritious yields. This hidden hunger was presented as a scientific problem to be solved by "experts" and scientifically engineered smart foods rather than through local knowledge, which was deemed unscientific and, hence, irrelevant.In Hidden Hunger, Aya Hirata Kimura explores this recent emphasis on micronutrients and smart foods within the international development community and, in particular, how the voices of women were silenced despite their expertise in food purchasing and preparation. Kimura grounds her analysis in case studies of attempts to enrich and market three basic foods—rice, wheat flour, and baby food—in Indonesia. She shows the power of nutritionism and how its technical focus enhanced the power of corporations as a government partner while restricting public participation in the making of policy for public health and food. She also analyzes the role of advertising to promote fortified foodstuffs and traces the history of Golden Rice, a crop genetically engineered to alleviate vitamin A deficiencies. Situating the recent turn to smart food in Indonesia and elsewhere as part of a long history of technical attempts to solve the Third World food problem, Kimura deftly analyzes the intersection of scientific expertise, market forces, and gendered knowledge to illuminate how hidden hunger ultimately defined women as victims rather than as active agents.

The Petexbatun bioarchaeology subproject included complete assessment of burial practice and osteology. The chapters on this research explore population variability in time and space, paleopathology, and trauma from skeletal remains throughout the various sites and the inter-site areas of the Petexbatun, as well as from Seibal and Altar de Sacrificios. Yet Wright's innovative study goes on to apply the most recent physical and chemical techniques, particularly isotopic analysis, to assess diet and health in the populations of the Pasion region. Variability between sites, across levels of status, and over time are assessed and conservatively interpreted in the light of contemporary issues and problems of physical, chemical, and statistical methodology. Finally, the Petexbatun and Pasion region results are compared in order to reassess past and current studies and interpretation of skeletal remains in other regions of the ancient Maya lowlands. In the final chapters of this work, Wright's cutting-edge osteological analyses are used to critique current alternative interpretations of Late Classic to Postclassic culture history and alternative hypotheses on the role of changes in climate, ecology, diet, nutrition, invasion, and other factors in the end of Classic Maya civilization and the transition to the Postclassic period. This volume also provides an independent assessment of the results of other Petexbatun region subprojects and a comparative evaluation of recent studies by other projects of Late and Terminal Classic culture change. For bioarchaeologists, this work sets a new standard in breadth and depth of osteological study. For Pre-Columbian scholars in general, it provides new insights into the environmental and biological issues involved in the debate on the end of the Classic period of Maya civilization.
