Numerous studies have shown that following a Mediterranean diet is inversely correlated with risk of cardiovascular diseases and risk factors including type 2 diabetes and hypertension. Filipino-Americans have demonstrated awareness of the health issues that plague their community, but further outreach is needed in the form of culturally relevant materials that address type 2 diabetes and hypertension. The purpose of this project is to: (1) explore the relationship between chronic disease and the Filipino-American diet, (2) raise awareness of the nutritional content of Filipino-American foods, and (3) create alternative, Mediterranean-based Filipino-American dishes that are more health-protective than their original recipes.
