Book excerpt: Rearing young stock for replacement heifers is probably one of the least well understood and practiced aspects of herd and feeding management on dairy farms throughout the world, particularly on smallholder dairy farms in the tropics. This book addresses all the major concerns of the small holder dairy farmer in Asia. It shows how to attain optimal growth in young stock, so that as cows, they can calve at an appropriate early age at the lowest cost and promptly substitute for any cows culled from the milking herd. This provides continuing returns on the investments of feed, labor and other farm resources. Low reproductive rates and high calf mortality are the major causes of reproductive wastage. This has a direct bearing on culling and replacement strategies and on genetic improvement. In many tropical countries, calf mortality can be as high as 50%. In some areas this can be due to climatic stress on temperate or crossbred stock. While climatic stress compounds the other hazards of calf life, high calf mortality is usually due to diseases and poor feeding management. Book excerpt: According to the European legislation (Regulation EC No 853/2004), the food business operators collecting raw milk intended for the production of milk and dairy products must ensure compliance with certain health requirements for the animals. The animals must not show any symptoms of infectious diseases transmittable to humans, or signs of diseases of the udder or the genital tract that could contaminate milk. Furthermore, they must belong to a holding free or officially free of tuberculosis and brucellosis, and no unauthorized substances or authorized drugs must have been administered without respect to the withdrawal period. Dairy Farming: Operations Management, Animal Welfare and Milk Production presents a study with the goal of evaluating the compliance with the mentioned criteria in milk samples collected from 100 different dairy farms located in Central Italy. Additionally, under European milk quotas, dairy farms in Europe were limited in the amount of milk they could produce. While quotas were gradually increased over the past four decades, European milking quotas were completely abolished in April 2015 to help meet an expected 20% increase in the global consumption of milk and dairy products by 2050. With this, European dairy farmers can freely expand milk production based upon expected milk prices controlled by open market supply and demand. The authors present a review focused on milk production forecasting models and data variation from a past and future perspective. A comprehensive review of model applications and comparisons from studies over the past two decades is carried out, and both classical and modern methods are reviewed analysed. The concluding review focuses on scientific LCA studies conducted on a variety of different milk production systems, including the treatment of milk co-products, different allocation methods, the assessment of environmental impacts caused by fertilizers and agrochemicals in feed grain production and in the different stages of milk production. However, the methodology requires a higher degree of standardization, especially for the analysis of complex agricultural and livestock systems and their various forms and characteristics.

Book excerpt: Dairy consumption in Asia has more than doubled over the last 25 years, and has led to more than 50% of the world's total dairy imports now entering Asian markets. Consequently, Asian countries are seeking to improve their self-sufficiency in dairy produce by developing their local milk industries. Asian livestock importers are looking for increasing numbers of high grade dairy stock from established dairy industries in countries such as Australia and New Zealand. Unfortunately, a major problem encountered throughout Asia has been the poor performance of these exotic high grade dairy heifers when exported from their country of origin to a new, more stressful environment. This has been due to a failure to prepare for their introduction. Exotic dairy cows, particularly those from farms with high levels of herd performance, have high management requirements. If subjected to local and traditional small holder dairy farm practices, they are unlikely to produce acceptable yields of milk or may not even get back into calf. Poor management practices can lead to low growth rates, delayed breeding, stock diseases and even deaths among imported stock both before and after first calving. Managing High Grade Dairy Cows in the Tropics addresses the entire range of management practices found on tropical small holder dairy farms, highlighting those which are likely to adversely impact on heifer and cow performance, hence farm profitability. It is a companion volume to two previous manuals written by John Moran: Tropical Dairy Farming and Business Management for Tropical Dairy Farmers.

Within such official narratives, there has been relatively little engagement with the geographies of dairy development, both its place-specific productions through political contests, availabilities of labor, and distributions of agricultural resources, and the unevenness of its outcomes across rural India. This absence is even more surprising given that village-level cooperatives comprise the foundation of India's dairy development program, and the work of women within rural households is continuously invoked as an integral part of the dairy work. This book extends and enriches current understandings of cooperative dairying in India to show both its value to rural communities as well as the limitations of its participatory structures. Combining comparative and ethnographic approaches, explanations for the diverse outcomes of cooperative dairying are provided from the perspective of the people and places directly involved in the everyday reproductions of rural development. This book contributes to existing understandings of rural development and rural geographies in four significant ways. First, by following histories of development from their local origins to their national and international appearances, the global genealogies that are usually attached to development are rendered more complex. Second, by connecting cooperatives to place, the ways in which participation in development reflects local struggles for power and, hence, are structured through local inequalities, is revealed. Third, by linking dairying and agriculture, the continuing importance of resource distributions in shaping the outcomes of rural development is highlighted. Finally, the crucial role of household divisions of labor in the success of village dairy cooperatives is explicated through showing how struggles over the meanings of rural women's work become key to enabling household-level participation in dairying. This book will be of interest to scholars in a wide range of disciplinary and interdisciplinary fields, including geography, sociology, anthropology, rural studies, development studies, gender studies, and regional studies of India.

Looking specifically at the internal history of the Borden Company—the world’s largest dairy firm—as well as small-town efforts to lure industry and manufacturing south, Marcus suggests that the rise of the modern dairy business resulted from debates and redefinitions that occurred in both the northern industrial sector and southern towns. Condensed milk production in Starkville, Mississippi, the location of Borden’s and the South’s first condensery, so exceeded expectations that it emerged as a touchstone for success. Starkville’s vigorous self-promotion acted as a public relations campaign that inspired towns in Tennessee, Alabama, Louisiana, and Texas to entice northern milk concerns looking to relocate. Local officials throughout the South urged farmers, including Black sharecroppers and tenants, to add dairying to their operations to make their locales more attractive to northern interests. Many did so only after small-town commercial elites convinced them of dairying’s potential profitability. Land of Milk and Money focuses on small-town businessmen rather than scientists and the federal government, two groups that pushed for agricultural diversification in the South for nearly four decades with little to no success. As many towns in rural America faced extinction due to migration, northern manufacturers’ creation of regional facilities proved a potent means to boost profits and remain relevant during uncertain economic times. While scholars have long emphasized northern efforts to decentralize production during this period, Marcus’s study examines the ramifications of those efforts for the South through the singular success of the southern dairy business. The presence of local dairying operations afforded small towns a measure of independence and stability, allowing them to diversify their economies and better weather the economic turmoil of the Great Depression.

It is not enough that a value chain is competitive but not inclusive or it is competitive and inclusive but not sustainable. The issue of scalability is very critical to achieve macro gains in terms of greater farmer outreach and sectoral growth. The research undertaken here brings out some very useful insights for policymaking in terms of what needs to be done better to steer the agricultural value chains towards being more competitive, inclusive, sustainable and scalable. The value chain specific research findings help draw very nuanced policy recommendations as well as present a big picture of the future direction of policy making in agriculture.
