Book excerpt: La Directive Cadre européenne sur l'Eau, récemment adoptée, fixe un cadre de gestion des masses d'eau européennes et vise à atteindre un " bon état " de ces masses d'eau d'ici 2015. Ceci risque d'être particulièrement ardu à réaliser en ce qui concerne les masses d'eau de transition, qui ont des fonctions écologiques essentielles mais subissent une anthropisation très importante. Afin d'évaluer la qualité de ces masses d'eau, la DCE impose la mise au point de divers indicateurs de qualité. Le Cemagref est chargé du développement d'un indicateur basé sur la composante piscicole des écosystèmes de transition. Une étude bibliographique des différents indices existants nous a fait apparaître le caractère essentiel de la définition d'états de référence, c'est-à-dire des caractéristiques du peuplement dans un milieu non perturbé. De tels systèmes étant inexistants en France, il est apparu nécessaire de réaliser un indice de pressions anthropiques, permettant d'identifier au sein des masses d'eau de transition françaises celles qui subissent le moins de pressions, et qui pourront fournir des données de référence, ou permettra par des traitements statistiques de calculer ces états de référence. L'indice que nous avons mis au point synthétise des données de pollution de l'eau, de pressions sur l'habitat et de pressions sur le vivant, fournit un classement des masses d'eau qui permet l'identification des sites les moins touchés par les pressions humaines, et sera intégré dans l'indice multimétrique développé par le Cemagref pour répondre aux exigences de la DCE.

In fact, this process is very old. In older industries such the food and agricultural, this technique has been extensively used. An example of this is the production of pork sausages and Roquefort cheese. Pharmaceutical industry could make extensive use of SSF in the production of secondary metabolites of many kinds and development in this direction is soon expected.
