Book excerpt: When WILHELM RUHLAND developed his plan for an Encyclopedia of Plant Physiol ogy more than three decades ago, biology could still be conveniently subdivided into classical areas. Even within plant physiology, subdivisions were not too difficult to make, and general principles could be covered sufficiently in the two introductory volumes of the Encyclopedia on the physical and chemical basis of cell biology. But the situation changed rapidly even during the 12-year publication period of the Encyclopedia (1955-1967). The new molecular direction of genetics and structural research on biopolymers had an integrating effect on all other biological fields, including plant physiology, and it became increasingly difficult to keep previously distinct areas separated. RUHLAND'S overall plan included 18 volumes and about 22,000 pages. It covered the entire field of plant physiology, in most cases from the very beginning. But, as each volume appeared, it was clear that its content would soon be outdated.

Quite apart from its important role in the development of ophthalmology and related medical disciplines, the vertebrate eye is an exemplar of the ingenuity of living systems in adapting to the diverse and changing environments in which vertebrates have evolved. The wonder is not so much that the visual system, like other body systems, has been able to adapt in this way, but rather that these adaptations have taken such a variety of forms. In a previous volume in this series (VII/I) Eakin expressed admiration for the diversity of invertebrate photoreceptors. A comparable situation exists for the vertebrate eye as a whole and one object of this volume is to present to the reader the nature of this diversity. One result of this diversification of ocular structures and properties is that the experimental biologist has available a number of systems for study that are unique or especially favorable for the investigation of particular questions in visual science or neurobiology. This volume includes some examples of progress made by the use of such specially selected vertebrate systems. It is our hope that this comparative approach will continue to reveal new and useful preparations for the examination of important questions.

Understanding the way in which a substance moves and behaves is essential in order to be able to transport and mix it during processing. Secondly, the rheology of a product dictates much of the consumer experience, e.g. in relation to texture and mouthfeel. This book doesn’t overwhelm the reader with complex mathematical equations but takes a simple and practically-focused approach, interpreting the implications of rheological data for use in different food systems. Through this approach industry-based food developers / rheologists, students, and academics are given clear, concise interpretation of rheological data which directly relates to actual perceived functionality in the food. The functionality may relate to texture, structure and mouthfeel, and may result as a function of temperature, pH, flocculation, concentration effects, and mixing. The interpretative view is based on the principle that the food rheologist will produce a graph, for example of viscosity or gelation profiling, and then have to extract a practical meaning from it. For example, if viscosity falls with time as a function of pH, this knowledge can be used to tell the customer that the viscosity can be followed with just a pH meter and a stopwatch. Rheological measurements have shown that once the pH has dropped 1 unit after 10 minutes, the viscosity has been halved. This is the type of practical and valuable information for customers of the industrial food rheologist which the book will enable readers to access. The diversity of economic and political systems represented in the group was matched by our occupations, which stretched from science policy practitioners, through research scientists and engineers, through academic observers of science and science policy. It was this diversity, along with the opportunities for infonnal discussion provided by long meals and remote location, that made the conference a special learning experience. Except at lecture time, it was impossible to distinguish the "students" at this event from the "teachers," and even the most senior members of the teaching staff went away with a sense that they had learned more from this group than from many a standard conference on science policy they had attended. The flavor of the conference experience cannot be captured adequately in a proceedings volume, and so we have not tried to create a historical record in this book. Instead, we have attempted to illustrate the core problems the panicipants at the conference shared, discussed, and debated, using both lectures delivered by the fonnal teaching staff and summaries of panel discussions, which extended to other panicipants and therefore increased the range of experiences reponed.
