In day-to-day survival and marketing situations, we can or not most foods are fit to eat from their optical tell whether properties. Although vision and colour perception are the means by which we appreciate our surroundings, visual acceptance depends on more than just colour. It depends on total appearance. In the recent past the food technologist has been under pressure to increase his/her understanding of first, the behaviour of raw materials under processing, and second, the behaviour and motivation of his/her customers in a growing, more discriminating, and worldwide market. The chapters which follow describe the philosophy of total ap pearance, the factors comprising it, and its application to the food industry. Included are: considerations of the evolutionary, historical, and cultural aspects of food appearance; the physics and food chemistry of colour and appearance; the principles of sensory ap pearance assessment and appearance profile analysis, as well as instrumental measurement; the interaction of product appearance, control, and acceptance in the varied environments of the laboratory, production line, supermarket, home and restaurant. A broad examination has been made in an attempt to get into perspective the importance of appearance to all sectors of the industry.

Book excerpt: Mitja Velikonja has written a comprehensive survey that examines how religion has interacted with other aspects of Bosnia-Herzegovina's history. Velikonja sees the former Ottoman borderland as a distinct cultural and religious entity where three major faiths -- Islam, Catholicism, and Orthodoxy -- managed to coexist in relative peace. It is only during the past century that competing nationalisms have led to persecution, ethnic cleansing, and mass murder. Emphasizing the importance of religion to nationalism as a symbol of collective identity that strengthens national identity, Velikonja notes that religious groups have a tendency to become isolated from one another. He believes Bosnia-Herzegovina was unique in its sarlikost, or diversity, because while religion defined ethnic communities there and kept them separate, it did not create a culture of intolerance. Rather than suppressing one another, the region's ethno-religious groups learned to cooperate and mediate their differences -- useful behavior in an area that served as buffer between East and West for most of its history. Velikonja believes that Bosnians went beyond tolerance to embrace synthetic, eclectic religious norms, with each religious group often borrowing customs and rituals from its rivals. Rather than the extreme orthodoxy evident elsewhere in Europe, Bosnia became the home of heterodoxy. Sadly, nationalism changed all that, and the area became the scene of systematic persecution, forced conversion, and mass slaughter. Velikonja considers the misfortunes suffered by the Bosnians during the 1990s as largely the result of actions by their neighbors and local militants and inaction by the international community.But he also sees the tragedy that unfolded as the result of the exploitation of ethno-religious differences and myths by Serbian chauvinists and Croatian nationalists. It is an easily-learned language for those who want to use this language actively. Interslavic enables passive (e.g. receptive) understanding of the real Slavic languages. Non-Slavic people can use Interslavic as the door to the big Slavic world. Zonal constructed languages are constructed languages made to facilitate communication between speakers of a certain group of closely related languages. They belong to the international auxiliary languages, but unlike languages like Esperanto and Volapük they are not intended to serve for the whole world, but merely for a limited linguistic or geographic area where they take advantage of the fact that the people of this zone understand these languages without having to learn them in a difficult way. Zonal languages include the ancient Sanskirt, Old Church Slavonic, and Lingua Franca. Zonal design can be partially found also in modern languages such as contemporary Hebrew, Indonesian, and Swahili.

Na strmem skalnem hribu nad Sočo so bili odkriti sledovi več prazgodovinskih dob, rimskega, poznoantičnega in zgodnjesrednjeveškega obdobja. Izstopajo ostaline iz 5. in 6. stoletja n. š., ko je bila na hribu zgrajena velika naselbina z več kot dvajsetimi stanovanjskimi zgradbami in obrambnimi stolpi ob obzidju. Na vzvišenem osrednjem delu so bile raziskane tri odlično ohranjene zgodnjekrščanske cerkve z baptisterijem in dva zbiralnika za vodo. Podrobneje je predstavljena tudi velika stanovanjska zgradba s prizidkom, vetrolovom in ognjišči. Poznoantična naselbina je bila opuščena ob koncu 6. ali celo v prvi polovici 7. stoletja. Kasneje, okoli leta 800, je bila utrdba ponovno kratkotrajno poseljena. V vodniku opisane ostaline pomembno dopolnjujejo vedenje o skrivnostnem času odmiranja antike in preseljevanja ljudstev, ki je ključnega pomena za razumevanje nastanka slovenskega kot tudi mnogih drugih narodov sedanje Evrope. Vodnik je izšel še v angleški, nemški in italijanski različici.

Despite the central role of tourism in the political making of the Yugoslav socialist state after WWII and in everyday life, the topic has remained neglected as an object of historical research, which has tended to dwell on war and "ethnic" conflict in the past two decades. For many former citizens of Yugoslavia, however, memories of holidaymaking, as well as tourism as a means of livelihood, today evoke a sense of the "good life" people enjoyed before the economy, and subsequently the country, fell apart. The story evolved from the popularization of tourism and holidaymaking among Yugoslav citizens in the 1950s and 1960s to the consumer practices of the 1970s and 1980s. The essays review tourism as a political, economic and social project of the Yugoslav federal state, and as a crucial field of social integration; it is investigated how ideologies aimed to turn workers into consumers of "purposeful" leisure, and how these ideas were set against actual practices of recreation and holidaymaking.
