CCFP standards require enriched flour to be the primary ingredient by weight -- enriched all-purpose and/or whole-grain flour must be used. Because these quick breads have a sugar content which is much higher than most ordinary bread and bread alternates, they may not be served more than twice a week and used only for the supplemental meal.
