Book excerpt: La statistique a proposé beaucoup de méthodes pour évaluer les performances d'un panel d'analyse sensorielle. En revanche, peu de méthodes ont été proposées pour suivre l'évolution de cette performance au fil du temps. De plus, les niveaux moyens de performance en fonction des différents contextes de l’analyse sensorielle (types de produits, de descripteurs, d’échelles ...) n'ont jamais été documentés. Enfin, les comparaisons des mérites respectifs des méthodes statistiques de traitement des données sensorielles prennent rarement en compte cette diversité des contextes d'application. Elles se limitent en général à l'analyse de deux ou trois études sensorielles seulement. En accumulant plusieurs centaines de jeux de données d'analyse sensorielle descriptive et en les organisant dans une base de données (SensoBase), ce travail aborde ces trois questions simultanément. Le suivi longitudinal des performances du sujet et du panel est appréhendé à l’aide d’une adaptation du modèle mixte et des cartes de contrôle. Cette méthodologie est appliquée à deux séries de profils sensoriels extraites de la SensoBase. La première série rassemble 8 études réalisées par un même panel sur 4 années, alors que la seconde rassemble 43 études réalisées par un autre panel sur une année. Plus de 300 études de la SensoBase sont ensuite utilisées pour mesurer les niveaux des performances généralement atteints en analyse sensorielle. L’analyse de ces données permet également de déterminer quelles variables individuelles (âge, sexe, niveau d'éducation, ...) ou liées aux caractéristiques de l’étude (type d'échelle, pays d’origine, ...) influent sur les performances. Enfin, la SensoBase est utilisée pour évaluer la fréquence de l’existence d’une hétérogénéité entre les sujets d’un panel d’analyse sensorielle en termes de répétabilité et d’étendue d’utilisation de l’échelle. Cette approche est basée sur une comparaison entre le modèle de Brockhoff et l’analyse de la variance classique. La base de données, que ce travail a contribué à fonder, a permis, d'une part, de mieux connaître les capacités et les limites d'un panel d'analyse sensorielle et, d'autre part, d'offrir un banc d'essai et de comparaison des méthodes d'analyse des données sensorielles. A la frontière entre l'acquisition de connaissances en analyse sensorielle et le choix de méthodes d'analyse statistique, ce travail est intrinsèquement une thèse de sensométrie.

However, the perception of onsite or decentralized sanitation technologies for urban areas is gradually changing, and is increasingly being considered as long-term, sustainable options in urban areas, especially in low- and middle-income countries that lack sewer infrastructures. This is the first book dedicated to faecal sludge management.
