Book excerpt: @Alors que la consommation des produits halieutique a connu une forte croissance entre les années 1993 et 2003, la filière pêche française fait face, depuis 2004, à une stagnation de la consommation autour de 35kg par habitant et par an. Les consommateurs se tournent aujourd'hui vers des produits jugés plus pratiques tels que les surgelés ou encore les produits traiteurs réfrigérés. Etant donné ce constat, il semble indispensable d'étudier les comportements, les attentes et les besoins des consommateurs de produits de la mer frais, afin de pouvoir apporter de nouveaux moyens de valorisation de ces produits. Ce présent travail s'inscrit dans le cadre du programme de recherche Cogépêche dont l'objeetif général est d'améliorer la mise en marché des produits de la mer frais en ajustant commercialisation et gestion durable de la pêche. Cette étude a pour objectif d'analyser les comportements, les attentes et les besoins des consommateurs de produits aquatiques grâce à la méthode des dissonances cognitives. Cette technique se base sur la mesure des incohérences entre les intentions d'achat et les achats réels, en interviewant les participants avant et après leurs achats. A travers cette é~ude, les habitudes de consommation des consommateurs ont pu être appréciées de manière plus précise, et la méconnaissance prononcée des produits de la mer frais a pu être mise en évidence. De même, les critères influençant principalement l'acte d'achat chez le consommateur ont également pu être mis en relief, à savoir d'une part la fraîcheur et la qualité des produits et d'autre part le prix de vente. Par suite, l'analyse des écarts entre l'acte prévu et l'acte d'achat réel a permis de statuer sur le point de vue des chalands en tant qu'acheteur et consommateur.

Il est par conséquent indispensable d'étudier les comportements, les attentes et les besoins des consommateurs vis-à-vis des produits de la mer frais. Ce présent travail s'insère dans le programme Cogépêche dont l'objectif général est d'améliorer la mise en marché des produits de la mer en ajustant commercialisation et gestion durable de la pêche. Cette étude a pour objectif d'analyser les comportements, les attentes et les besoins des consommateurs grâce à la méthode Delphi. Cette technique consiste à interroger des personnes jugées comme étant les plus aptes à apporter des connaissances dans ce domaine : les distributeurs de produits de la mer frais (grandes et moyennes surfaces, poissonneries traditionnelles et marchés). Cette étude a permis de souligner les principaux obstacles à la consommation des produits de la mer qui sont d'une part un prix jugé trop élevé par les consommateurs et, d'autre part, la méconnaissance des produits et de leur préparation. Le rapprochement de ces résultats avec des études consommateurs a mis en évidence certaines contradictions entre les motivations et l'acte d'achat des clients.

Book excerpt: @Au cours des dernières années, la consommation des produits de la mer frais a connu une stagnation alors que la consommation de produits de la mer transformés a enregistré une augmentation. On constate que les consommateurs des produits de la mer vieillissent alors que les plus jeunes consommateurs préfèrent des produits transformés faciles à utiliser ou prêts à consommer. Ces produits de la mer frais ne répondent pas toujours à la demande tant intrinsèquement (apparence, goût, appétence) qu'extrinsèquement (mode de préparation, usage, origine, marque, prix). Pour comprendre l'évolution des attentes, motivations et besoins des consommateurs, un programme de recherche « COGEPECHE » a été mis en place afin de mieux évaluer ces attentes et besoins. Dans le cadre de ce programme de recherche, une étude qualitative: chaînes moyens fins a été réalisée pour rendre comptes des liens existants entre les attributs des produits de la mer frais, les bénéfices apportés par ceux-ci (conséquences) et les valeurs individuelles des consommateurs. Les résultats de cette étude dresse un bilan du comportement des consommateurs et dégage un certain nombre de pistes de valorisation des produits de la mer frais.

The Environmental Protection Agency's decision in the summer of 2001 to delay implementing a new, more stringent standard for the maximum allowable level for arsenic in drinking water generated a great deal of criticism and controversy. Ultimately at issue were newer data on arsenic beyond those that had been examined in a 1999 National Research Council report. EPA asked the National Research Council for an evaluation of the new data available. The committee's analyses and conclusions are presented in Arsenic in Drinking Water: 2001 Update. New epidemiological studies are critically evaluated, as are new experimental data that provide information on how and at what level arsenic in drinking water can lead to cancer. The report's findings are consistent with those of the 1999 report that found high risks of cancer at the previous federal standard of 50 parts per billion. In fact, the new report concludes that men and women who consume water containing 3 parts per billion of arsenic daily have about a 1 in 1,000 increased risk of developing bladder or lung cancer during their lifetime.
