Book Improving Public Health Through Mycotoxin Control

Download or read book Improving Public Health Through Mycotoxin Control written by International Agency for Research on Cancer and published by IARC Scientific Publications. This book was released on 2012 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: Mycotoxins are fungal toxins that contaminate many of the most frequently consumed foods and feeds worldwide, including staple foods consumed by many of the poorest and most vulnerable populations in the world. Therefore, human and animal exposure to one or more of this broad group of toxins is widespread. Mycotoxins have the potential to contribute to a diversity of adverse health effects in humans, including cancer, even at low concentrations. Economic burdens resulting from crop contamination are added to those on health. Given the ubiquitous nature of exposure in many countries, an urgent need exists for a coordinated international response to the problem of mycotoxin contamination of food. This book aims to sensitize the international community to the mycotoxin problem in a format that is accessible to a wide audience and is useful to decision-makers across a broad spectrum of disciplines, including agriculture, public health, marketing, and economics. The editors hope that this book will be a stimulus to governments, nongovernmental and international organizations, and the private sector to initiate measures designed to minimize mycotoxin exposure in high-risk populations. The book not only provides a scientific description of the occurrence and effects of mycotoxins but also goes further by outlining approaches to reduce mycotoxin exposure aimed at improving public health in low-income countries.

Book Quality and Preservation of Vegetables

Download or read book Quality and Preservation of Vegetables written by Michael Eskin and published by CRC Press. This book was released on 2021-05-30 with total page 322 pages. Available in PDF, EPUB and Kindle. Book excerpt: This comprehensive work discusses those factors which contribute to the overall quality of the major vegetables grown in North America for the fresh market as well as methods for storing and preserving these crops. The qualities which determine the suitability of a crop for processing is also discussed since the majority of vegetables, with the exception of lettuce and celery, are processed for the retail market. The selection of vegetables is based on their economic importance although several others are included for completion.

Book Phenolic Compound Biochemistry

Download or read book Phenolic Compound Biochemistry written by Wilfred Vermerris and published by Springer Science & Business Media. This book was released on 2007-02-20 with total page 284 pages. Available in PDF, EPUB and Kindle. Book excerpt: These are just a few examples that illustrate the chemical diversity and use of phenolic compounds, the topic of ‘Phenolic Compound Biochemistry’. This book is written for researchers, instructors, advanced undergraduate students and beginning graduate students in the life sciences who wish to become more familiar with these and many other intriguing aspects of phenolic compounds. Topics covered include nomenclature, chemical properties, biosynthesis, including an up-to-date overview of the genetics controlling phenolic metabolism, isolation and characterization of phenolic compounds, phenolics used in plant defense, and the impact of phenolics on human health. The book is written in an accessible style, and assumes only basic knowledge of organic chemistry, biochemistry and cell physiology. More than 300 chemical structures and reaction schemes illustrate the text. Wilfred Vermerris is Associate Professor of Agronomy at the University of Florida Genetics Institute in Gainesville, FL. His research focuses on the genetic control of phenolic compounds that impact agro-industrial processing of crop plants. Ralph Nicholson is Professor of Botany and Plant Pathology at Purdue University in West Lafayette, IN. He is an expert on phenolic compounds involved in the plant’s defense against pathogenic fungi and bacteria.
