Book excerpt: Abstract Background: Metabolic Syndrome (MetS) is a widespread condition that results in increased risk for cardiovascular disease (CVD) and type 2 diabetes (T2D). MetS is often accompanied by lowgrade inflammation and insulin resistance. Eggs are a low cost, nutrient dense food that are a good source of phosphatidylcholine (PC) and fat-soluble vitamins. However, due to their high cholesterol content, the health effects of eggs remain controversial. Objective: This study aims to investigates the effects of choline from egg (PC) vs. supplement (choline bitartrate, CB) on concentrations of plasma choline, lipids, glucose, insulin, and inflammatory biomarkers. Subjects and Methods: Twenty-four women and men with MetS were recruited for this 12-week, randomized cross-over dietary intervention. Following a screening to qualify for participation, subjects completed a two-week washout period where they began the study long diet of abstaining from eggs and choline rich foods. After the washout, a four-week intervention phase involved the consumption of either three large, whole eggs per day or CB supplement. A second, three- week washout period occurred before the subjects crossed over to the alternate intervention for the remaining four-weeks of the study. Data collection occurred before and after each intervention phase. Results: With both interventions, plasma choline concentrations increased while interleukin (IL)-6 concentrations decreased from baseline. Only the egg phase impacted C-reactive proteins (CRP), insulin, and insulin resistance (HOMA-IR) which all improved from baseline. No change in plasma lipids were reported after either intervention including triglycerides (TG), low density lipoprotein (LDL)- cholesterol or high density lipoprotein (HDL)- cholesterol, compared either to baseline or between treatments. Conclusion: Intake of three eggs per day improved plasma choline concentrations, while not increasing plasma LDL- cholesterol concentrations. Eggs also provided additional benefits on biomarkers of CVD and T2D compared to choline supplement. Therefore, eggs should be considered a healthful part of the diet for people with MetS.
