Book Chef Wars Top Chef Top Chef Masters Top Chef Just Desserts

Download or read book Chef Wars Top Chef Top Chef Masters Top Chef Just Desserts written by Arthur E. Perkins, Jr. and published by Createspace Independent Pub. This book was released on 2011-05-01 with total page 316 pages. Available in PDF, EPUB and Kindle. Book excerpt: Three of the four most popular chef-based reality series are Top Chef, Top Chef Masters and Top Chef - Just Desserts. Each has dvnamic leadership: Tom Colicchio and Gail Simmons for Top Chef; Tom Colicchio for Top Chef Masters; Gail Simmons and John Iuzzini for Top Chef- Just Desserts. What is it about these chef competitions that is uniquely appealing to BRAVO viewers? The quirky personalities of the competing chefs, all trying to rise quickly in the culinary profession and facing a lot of competition, is primary for me in Top Chef and Top Chef-Just Desserts. The Top Chef Masters, having already arrived at the pinnacle of their profession, are much more relaxed and sharing. The personalities of the staff and judges are important for Top Chef and for Top Chef-Just Desserts, but less so for Top Chef Masters as the show has been set up in a decentralized mode with the master chefs the major stars. Top Chef is set up to feature the competing chefs plus to a lesser extent Tom Colicchio with approximately 15 episodes. Top Chef Masters is truly decentralized, with about 24 master chefs competing in preliminary rounds and champions rounds totalling about 10 episodes. Top Chef- Just Desserts is set up just like regular Top Chef but with fewer chefs and fewer episodes. There are a variety of tasks which are the challenges the chefs face. In Top Chef there are Quickfire Challenges to test specific skills and abilities and there are Elimination Challenges which will test a broader array of skills, particularly ability to handle unexpected situations and twists. Top Chef Masters and Top Chef-Just Desserts have quite similar episode structures. The purpose of all except a few episodes is to find a loser (who is eliminated) and one winner (who gets a reward most of the time) . Arthur E. Perkins Jr. grew up in New England and has also lived in the Northeast, Midwest and South. He graduated from the Massachusetts Institute of Technology with a B.S. Economics and from the Sloan School of Management with a M.S. Management. He had a 19 year management with large process industry companies. His second career has been consulting with small management services companies. He lives in New Jersey with his wife and dog. He has 2 adult children. He is a superfan of Top Chef, Top Chef Masters and Top Chef-Just Desserts. This is his second book and a third one on Hell's Kitchen will be available in 2011.

Book My Kitchen Wars

Download or read book My Kitchen Wars written by Betty Fussell and published by Open Road Media. This book was released on 2015-03-03 with total page 158 pages. Available in PDF, EPUB and Kindle. Book excerpt: A fierce and funny memoir of kitchen and bedroom from James Beard Award winner Betty Fussell A survivor of the domestic revolutions that turned American television sets from Leave It to Beaver to The Mary Tyler Moore Show to Julia Child’s The French Chef, food historian and journalist Betty Fussell has spotlighted the changes in American culture through food over the last half century in nearly a dozen books. In this witty and candid autobiographical mock epic, Fussell survives a motherless household during the Great Depression, gets married to the well-known writer and war historian Paul Fussell after World War II, goes through a divorce, and finally escapes to New York City in her mid-fifties, batterie de cuisine intact. My Kitchen Wars is a revelation of the author’s lifelong love affair with food—cooking it, eating it, and sharing it—no matter where or with whom she finds herself. From Princeton to Heidelberg and from London to Provence, Fussell ladles out food, sex, and travel with her wooden spoon, welcoming all who come to the table.

Book The Foie Gras Wars

    Book Details:
  • Author : Mark Caro
  • Publisher : Simon and Schuster
  • Release : 2009-03-10
  • ISBN : 143915838X
  • Pages : 369 pages

Download or read book The Foie Gras Wars written by Mark Caro and published by Simon and Schuster. This book was released on 2009-03-10 with total page 369 pages. Available in PDF, EPUB and Kindle. Book excerpt: In announcing that he had stopped serving the fattened livers of force-fed ducks and geese at his world-renowned restaurant, influential chef Charlie Trotter heaved a grenade into a simmering food fight, and the Foie Gras Wars erupted. He said his morally minded menu revision was meant merely to raise consciousness, but what was he thinking when he also suggested -- to Chicago Tribune reporter Mark Caro -- that a rival four-star chef 's liver be eaten as "a little treat"? The reaction to Caro's subsequent front-page story was explosive, as Trotter's sizable hometown moved to ban the ancient delicacy known as foie gras while an international array of activists, farmers, chefs and politicians clashed forcefully and sometimes violently over whether fattening birds for the sake of scrumptious livers amounts to ethical agriculture or torture. "Take a dish with a funny French name, add ducks, top it all off with celebrity chefs eating each other's livers, and that's entertainment," Caro writes. Yet as absurd as battling over bloated waterfowl organs might seem, the controversy struck a serious chord even among those who had never tasted the stuff. Reporting from the front lines of this passionate dining debate, Caro explores the questions we too often avoid: What is an acceptable amount of suffering for an animal that winds up on our plate? Is a duck that lives comfortably for twelve weeks before enduring a few weeks of periodic force-feedings worse off than a supermarket broiler chicken that never sees the light of day over its six to seven weeks on earth? Why is the animal-rights movement picking on such a rarefied dish when so many more chickens, pigs and cows are being processed on factory farms? Then again, how could the treatment of other animals possibly justify the practice of feeding a duck through a metal tube down its throat? In his relentless yet good-humored pursuit of clarity, Caro takes us to the streets where activists use bullhorns, spray paint, Superglue and/or lawsuits as their weapons; the government chambers where politicians weigh the ducks' interests against their own; the restaurants and outlaw dining clubs where haute cuisine preparations coexist with Foie-lipops; and the U.S. and French farms whose operators maintain that they are honoring tradition, not abusing animals. Can foie gras survive after 5,000 years? Are we on the verge of a more enlightened era of eating? Can both answers be yes? Our appetites hang in the balance.

Book Foodies

    Book Details:
  • Author : Josee Johnston
  • Publisher : Routledge
  • Release : 2014-12-19
  • ISBN : 1317745019
  • Pages : 277 pages

Download or read book Foodies written by Josee Johnston and published by Routledge. This book was released on 2014-12-19 with total page 277 pages. Available in PDF, EPUB and Kindle. Book excerpt: This important cultural analysis tells two stories about food. The first depicts good food as democratic. Foodies frequent ‘hole in the wall’ ethnic eateries, appreciate the pie found in working-class truck stops, and reject the snobbery of fancy French restaurants with formal table service. The second story describes how food operates as a source of status and distinction for economic and cultural elites, indirectly maintaining and reproducing social inequality. While the first storyline insists that anybody can be a foodie, the second asks foodies to look in the mirror and think about their relative social and economic privilege. By simultaneously considering both of these stories, and studying how they operate in tension, a delicious sociology of food becomes available, perfect for teaching a broad range of cultural sociology courses.

The book takes readers inside schools, through the history of school food programs in the United States and England, and into the policy terrain that makes school lunch difficult to change. Through diverse case studies—hungry linebackers, pink slime, English reality television and policy making, pizza as a vegetable, lunch shaming, and more—chapters provide detailed analysis of rhetorical tactics, arguments over, and policy for school feeding. The book concludes with a progressive vision of school food that is healthy, pleasurable, educative, shame-free, and, most importantly, free for all students, just like the rest of school.
