Book excerpt: Excerpt from Chafing Dish Possibilities Blest he the spot, where cheerful guests retire To pause from toil, and trim their evening fire; Blest that abode, where want and pain repair, And every stranger finds a ready chair; Blest be those feasts with simple plenty crown'd, Where all the ruddy family around Laugh at the jests of pranks that never fail. Or sigh with pity at some mournful tale, Or press the bashful stranger to his food, And learn the luxury of doing good! Goldsmith We may live without poetry, music, and art; We may live without conscience, and live without heart; We may live without friends, we may live without books; But civilized man cannot live without cooks. He may live without books, - what is knowledge but grieving? He may live without hope, - what is hope but deceiving? He may live without love, - what is passion but pining? But where is the man that can live without dining? Owen Meredith About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book Our Founding Foods

  • Publisher : Willow Creek Press

Download or read book Our Founding Foods written by Jane Tennant and published by Willow Creek Press. This book was released on 2014-07-12 with total page 442 pages. Available in PDF, EPUB and Kindle. Book excerpt: American cuisine has absorbed the best and brightest of every culture world wide, and it all began in the early cookbooks of the eighteenth century. Martha Washington, for instance, our first First Lady, was America's earliest celebrity chef. Her recipe collection was a beloved family heirloom, lent out to friends one receipt at a time. Others followed. In the South, Thomas Jefferson's cousin, Mary Randolph, wrote a best selling cookbook many of whose recipes are still used today. In upstate New York, an enterprising young woman called Amelia Simmons set out the traditional American fare that graced Thanksgiving tables for generations. Her cookbook was said to be the "Second Declaration of Independence, written on a kitchen table." And culinary celebrities kept coming, inspired by the bounty of America's fields and streams and gardens and enriched by the many different ethnic traditions at work over the hearth fires. It is all here in Our Founding Foods: pioneer campfire cookery, the first Mexican American cuisine, the liberated voices of former slave chefs and the Grand Dames of the early cooking schools. Author Jane Tennant presents over 200 recipes drawn from the best early American cookbooks, all written during the first two hundred years of our culinary history. Each recipe is referenced to its original source with biographical notes on the chef who published it. The bibliography to this collection extends back to 1615, when Gervase Markham, a contemporary of William Shakespeare, raved about manchet bread. From that moment forward the text leaps across America's culinary history culminating with the Fannie Farmer Cooking School in Boston in 1903. Along the way, you'll also learn what George Washington offered his guests at Mount Vernon; the favorite ice cream of Thomas Jefferson; how the cooks during the Civil War managed without flour; and the recipe for the illicit candy found in the dorms of Vassar College. Rich with fascinating historical information and stories of American ingenuity in the kitchen, this tour de force is a unique resource for cooks and historians alike.

Book One Hundred Recipes for the Chafing Dish

Download or read book One Hundred Recipes for the Chafing Dish written by H. M. Kinsley and published by The Minerva Group, Inc.. This book was released on 2001 with total page 188 pages. Available in PDF, EPUB and Kindle. Book excerpt: If one spends time with this delightful, little book, he will soon notice that interest moved from the kitchen into the dining room. From preparing food for the family to serving and entertaining guests, and from seeking the bare necessities to desiring the finer things in life. The Civil War had ended only a generation before, and in only a few more years the twentieth century and a definite "new age" would arrive. It had been only a few years since the first telephone call, and also a few years since the first automobile was offered for sale to the public. The whole American continent was on the move. Americans were looking for the better things in life, so a large silver manufacturing company found it worthwhile to publish a lovely cookbook with some 100 recipes based only on the chafing dish cookery. An attempt was made to put the chafing dish into a historical and cultural context by tracing its history from the ancient Greeks and Romans, to the Middle Ages, into the Age of Discovery, and finally bringing it to the New World in 1720. According to the Introduction, "The colonists having overcome the difficulties incidental upon the making of a new country, began to appreciate and to desire the luxuries and adornments of refined living."After reassuring the reader that the sincerest expression of hospitality is to serve with chafing dishes, a long list of useful and not-so-useful recipes is given. Some of them are still as excellent today a they were when the book was written. Among those worth trying are the ones we have translated for the modern cook - Crab Meat a la Newburgh (p. 52), Liver a la Suisse (p. 158), and Rum Omelette(p. 129).It is interesting to note that this little book attempts to give accurate measurements and accurate timings, explaining the conditions under which the dishes were prepared in the company's testing facilities, restaurant-type dishes, such as those recipes which use lobster, crab, oysters and steak, the author also includes wholesome, but very simple dishes such as Frankfurter and Cabbage (p. 158), Welsh Rarebit (p. 178) and Smoked Pigs Jowl (p.97).

Book Fannie s Last Supper

  • Publisher : Hachette Books

  • ISBN : 1401396291
  • Pages : 241 pages

Download or read book Fannie s Last Supper written by Christopher Kimball and published by Hachette Books. This book was released on 2010-10-05 with total page 241 pages. Available in PDF, EPUB and Kindle. Book excerpt: In the mid-1990s, Chris Kimball moved into an 1859 Victorian townhouse on the South End of Boston and, as he became accustomed to the quirks and peculiarities of the house and neighborhood, he began to wonder what it was like to live and cook in that era. In particular, he became fascinated with Fannie Farmer's Boston Cooking-School Cook Book. Published in 1896, it was the best-selling cookbook of its age-full of odd, long-forgotten ingredients, fascinating details about how the recipes were concocted, and some truly amazing dishes (as well as some awful ones). In Fannie's Last Supper, Kimball describes the experience of re-creating one of Fannie Farmer's amazing menus: a twelve-course Christmas dinner that she served at the end of the century. Kimball immersed himself in composing twenty different recipes-including rissoles, Lobster À l'AmÉricaine, Roast Goose with Chestnut Stuffing and Jus, and Mandarin Cake-with all the inherent difficulties of sourcing unusual animal parts and mastering many now-forgotten techniques, including regulating the heat on a coal cookstove and boiling a calf's head without its turning to mush, all sans food processor or oven thermometer. Kimball's research leads to many hilarious scenes, bizarre tastings, and an incredible armchair experience for any reader interested in food and the Victorian era. Fannie's Last Supper includes the dishes from the dinner and revised and updated recipes from The Boston Cooking-School Cook Book. A culinary thriller. it offers a fresh look at something that most of us take for granted-the American table.
