Download or read book Milk and Meat from the Camel written by Omar Abdulkadir Sh. Abdurahman and published by vdf Hochschulverlag AG. This book was released on 2004 with total page 240 pages. Available in PDF, EPUB and Kindle. Book excerpt: Camel husbandry is becoming increasingly important in the arid zones of Africa. The camel has long been the mainstay of pastoral societies due to its drought tolerance, reliable milk and meat supply and ability to feed on a wide variety of plants. In the last few years, however, camels are also seen more and more in semi-arid rangelands, especially where overgrazing has depleted the grasses and increased the relative importance of shrubs. In spite of this growing importance, research on camel was limited until the early seventies to studies on topics such as anatomy, physiology, behaviour and to a lesser extent disease. However, since the early eighties the interest of the research on camels has been growing. Most advances have been made in reproductive physiology, veterinary and in the biochemistry of milk, while practical oriented research on improving camel productivity by developing marketable products targeting small and middle enterprises regrettably received little attention. This book attempts to fill this gap. The authors have profound knowledge on use of the camel as milk and meat animal. This knowledge is based on results of research work carried out in partnership with universities, camel farmers and pastoralists in Eastern African countries. The first part deals with chemical composition, technological properties, hygienic safety and quality control of camel milk. This is followed by the presentation of processing methods for different dairy products which should allow smallholder producers to process milk on farm or in centralised small scale dairy unit. In the second part special knowledge gained in slaughtering, deboning and processing of camels on-site over several years of long-term stays on the Ol Maisor Farm in Kenya is presented. During the development of camel meat products the authors set a great value on the keeping quality of the products as well as creating a wide range of product groups with low and high cost for the local market and a good shelf life. The book presents background information and recipes on the manufacture of camel milk and meat products and it is intended as a practical guide to professionals, government bodies and development agencies interested in building up small scale processing units for camel meat and milk products. It is hoped that it may also serve as a reference for extension personal working with camel herders, food scientists and students. The book is concerned entirely with the one-humped camel (Camelus dromedarius). The term "camel" should, therefore, be taken to refer to this species unless specifically stated otherwise.

Book excerpt: In this page-turning odyssey, a mother on a mission travels the globe — from Bedouin camps in the Middle East to Amish farms in Pennsylvania to camel-herder villages in India — to obtain camel milk, which dramatically helps her son’s autism symptoms. Chronicling bureaucratic roadblocks, adventure-filled detours, and Christina Adams’s love-fueled determination, Camel Crazy explores why camels are cherished as family members and hailed as healers. Adams’s work uncovers studies of camel milk for possible treatment of autism, allergies, diabetes, and immune dysfunction, as well as ancient traditions of healing. But the most fascinating aspect of Adams’s discoveries is the gentle-eyed, mischievous camels themselves. Huge and often unpredictable, they are amazingly intelligent and adaptable. This moving and rollicking ode to “camel people” and the creatures they adore reveals the ways camels touch lives around the world. Includes users’ and buyers’ guides to camel’s milk

Book excerpt: This practical guide is intended for all actors in the sector who work with large camelids, whether in breeding, technical advice or veterinary care. It successively describes the general aspects of the species, the physiological bases of reproduction, lactation and feeding, the main production processes, and health and hygiene management in camel breeding. Chapters on slaughter, important camel products and their processing complete the volume. Large camels (camels and Bactrian camels) are domestic animals that are increasingly used in Western countries, as well as in Africa and Asia, for tourism, sport, and production of milk, meat, and wool. In addition, camel husbandry systems are changing, taking a greater share of sedentary systems, specializing in breeding, and intensifying production. At the same time, many veterinarians and breeders are not familiar with the animal, its needs, physiology, diseases, and management, which is often based on practices introduced for cattle and proving ineffective. This work is a practical aid for all interested readers who want to embark on the adventure of working with large camelids in a cultural context where they are not yet a dominant element of the agricultural landscape. The numerous photographs and drawings that support the text make it a unique and entertaining read.

Available in PDF, EPUB and Kindle. Book excerpt: According to the data of the Ministry of Animal Resources Sudan maintained about 3.9 million heads of camels from a total 138 million heads of different livestock (2006). Despite the big number of livestock Sudan imports processed powdered milk at a time when the milk produced by camels does not find place in the total milk production and might even be wasted. This initiated this study during the period December 2006 through April 2007 to assess camel milk production and consumption in Khartoum State. The study aimed at assessing the possibilities of increasing awareness on camel milk nutritive and other values, define retarding factors and probing possibilities of future intensive camel milk production systems especially as camel farming is coming up in Khartoum State. The methodology followed by the study included questionnaires to camel owners and producers in Khartoum State. Visits and interviewing of a specialized shop owner for selling fresh and fermented camel milk was made. A visit was also made to the Food Research Center and the electronic library (University of Khartoum).

Book Buttermaking From Camel Milk By Blending It With Goat Milk

Download or read book Buttermaking From Camel Milk By Blending It With Goat Milk written by Aleme Asresie and published by LAP Lambert Academic Publishing. This book was released on 2013 with total page 80 pages. Available in PDF, EPUB and Kindle. Book excerpt: Ethiopia possesses over 2.4 million dromedary camels that stand the country third in Africa in camel population (FAO, 2010). Camels are kept, among other things mainly for milk production in the pastoral areas. They produce milk for quite longer period even during dry periods compared to cattle (Kurtu, 2003). The majority of camels in the country are found in the drier areas of the Eastern part of the country. Dromedary camels are naturally browsers, thrive on sparse pasture and produce milk where other domesticated animals would virtually starve (El Zubeir et al., 2010). Camel milk butter is believed to have some medicinal properties and laxative properties for gastrointestinal discomfort in different parts of the world (Rao et al., 1974). In the Sahara, fresh butter made from camel milk is not usually consumed rather used for medicinal purpose. Camel milk butter is also used in the preparation of nutritious and medical soups. The byproduct of butter, i.e., buttermilk, is used as a functional ingredient in many food products such as salad dressings, pasta sauces, chocolate, cheese seasonings, ice cream mixes, and yoghurt (Fox, et al., 2000).

Book Production And Quality Improvement Of Camel Milk Soft Unripened Cheese

Download or read book Production And Quality Improvement Of Camel Milk Soft Unripened Cheese written by Saima Inayat and published by LAP Lambert Academic Publishing. This book was released on 2014-06-18 with total page 124 pages. Available in PDF, EPUB and Kindle. Book excerpt: The word "cheese" could be used for the products manufactured from cow's milk, but milk from buffalo, sheep, goat and/or camel could also be used to make different types of cheese. There is no any documentary information available on the manufacturing of camel milk products (i.e butter, butter oil, yoghurt and cheese) from camel milk. However, some of the indigenous varieties of cheese, i.e Paneer, Peshawari cheese and processed cheddar cheese and/or cottage cheese have been produced in Pakistan. To make cheese from camel milk is one of the approach to produce camel milk products and make it valuable for consumers with the objectives to improve the quality of soft unripened cheese, to evaluate the sensory quality and to develop cheese acceptability profile made from camel milk.
