Book excerpt: Excerpt from Yield of Nonfat Dry Milk Solids From an Unit of Milk The average yield of nonfat dry milk solids found in this study was pounds per 100 pounds of whole milk equivalent dried and pounds per 100 pounds of liquid skim milk. Small differences in yields between roller and spray process plants and between plants receiving only whole milk and only skim milk were not statistically significant. For the plants studied as a whole, variations in yields within indi vidual plants were less than variations among plants. The weighted average of the total solids in the liquid skim milk re covered in drying was percent. This rate of recovery varied more greatly within plants than among plants. The proportion of the fat in the skim milk that was recovered varied widely. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book Milk Cheese and Butter

Download or read book Milk Cheese and Butter written by John Oliver and published by Forgotten Books. This book was released on 2018-03-10 with total page 456 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Milk, Cheese, and Butter: A Practical Handbook on Their Properties and the Processes of Their Production, Including a Chapter on Cream and the Methods of Its Separation From Milk Dairy-farmer or the Dairyman, neither of whom is necessarily a maker of cheese or butter. For this apt and comprehensive term we are indebted to Dr. F. T. Bond, of Gloucester, who has laid the community under far greater obligations by organising the first British Dairy Conference, as well as by personal research and enthusiasm in the spread of knowledge. Now that his rivals of America and the Continent are pressing on eagerly and persistently to the attainment of the best methods, it is more than ever necessary that the British Dairyer should master his art. This cannot be done without a thorough study of milk - its composition, character, and capabilities, and the influences to which these are subject - as a preliminary to careful study and observation of the processes by which cream, butter, and cheese are obtained from the milk. And with this there must be unwearying endeavour after perfection in the actual work of the dairy. Unless the theory of his art be understood, the Dairyer will either repeat the same procedure day by day without reference to changing con ditions which may upset his methods; or he will alter his methods blindly, following (it may be) mere convenience only, or taking up with practices which are inconsistent with the system or conditions under which he has to work. Book Principles and Practice Butter Making

Download or read book Principles and Practice Butter Making written by G. L. McKay and published by . This book was released on 2015-08-05 with total page 424 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Principles and Practice Butter-Making: A Treatise on the Chemical and Physical Properties, of Milk and Its Components, the Handling of Milk and Cream, and the Manufacture of Butter Therefrom The science of dairying is constantly broadening. The methods and art of manufacturing the best quality of butter have gradually changed in conformity with the scientific principles involved, and no one should now undertake to manufacture butter until he has made a careful study of the principles governing the best methods of manufacture. The authors admit that, in our present state of knowledge and experimental progress, it is in some instances difficult to distinguish well-established facts from those not universally confirmed; hence, it has been their object to give only information supported by the preponderance of experimental evidence. The first and second editions of this book have been received by the dairy schools and the practical creamerymen in a manner indicating that the work has met with general approval. The third edition has been carefully revised, and additional chapters have been added. The new chapters are: first, Defects Found in Butter - Some of the Causes and their Prevention; second, Neutralization of Cream; third, Milk and its Products as Foods - High Value of Milk Fat; fourth, Cold Storage and Butter for Storage Purposes; fifth, New Tests, including Accurate Method of Determining Per Cent of Fat in Buttermilk, Skim-milk and Ice Cream. The authors' endeavor has been to bring the book strictly up to date, and to include the latest and most approved methods in dairying. The authors believe that the subject of dairying should no longer be treated as a whole, and for this reason have treated special branches of the subject. In this volume they have endeavored to give such scientific information as relates to the manufacture of butter.
