Book Flour and Breads and their Fortification in Health and Disease Prevention

Download or read book Flour and Breads and their Fortification in Health and Disease Prevention written by Victor R. Preedy and published by Academic Press. This book was released on 2011-02-17 with total page 542 pages. Available in PDF, EPUB and Kindle. Book excerpt: Bread and flour-based foods are an important part of the diet for millions of people worldwide. Their complex nature provides energy, protein, minerals and many other macro- and micronutrients. However, consideration must be taken of three major aspects related to flour and bread. The first is that not all cultures consume bread made from wheat flour. There are literally dozens of flour types, each with their distinctive heritage, cultural roles and nutritive contents. Second, not all flours are used to make leavened bread in the traditional (i.e., Western) loaf form. There are many different ways that flours are used in the production of staple foods. Third, flour and breads provide a suitable means for fortification: either to add components that are removed in the milling and purification process or to add components that will increase palatability or promote health and reduce disease per se. Flour and Breads and their Fortification in Health and Disease Prevention provides a single-volume reference to the healthful benefits of a variety of flours and flour products, and guides the reader in identifying options and opportunities for improving health through flour and fortified flour products. Examines those flour and bread related agents that affect metabolism and other health-related conditions Explores the impact of compositional differences between flours, including differences based on country of origin and processing technique Includes methods for analysis of flours and bread-related compounds in other foods

Book Qualitative and Nutritional Improvement of Cereal Based Foods and Beverages

Download or read book Qualitative and Nutritional Improvement of Cereal Based Foods and Beverages written by Antonella Pasqualone and published by MDPI. This book was released on 2021-06-09 with total page 306 pages. Available in PDF, EPUB and Kindle. Book excerpt: Increased consumer awareness of the effects of food in preventing nutrient-related diseases and maintaining physical and mental well-being has made nutritional improvement an important goal for the food and beverage industry, including the cereal sector. The Book “Qualitative and Nutritional Improvement of Cereal-Based Foods and Beverages” collects research articles aimed at exploring innovative ways to improve cereal-based foods and beverages; an old—if not ancient—group of products which are still on our table every day. The main directions of research aimed at nutritional improvement have to face either excess or deficiency in the diet. To this end, different strategies may be adopted, such as the reformulation of products, the introduction of functional ingredients, and the application of biotechnologies to increase the bioavailability of bioactive compounds. These interventions, however, can alter the physico-chemical and sensory properties of final products, making it necessary to achieve a balance between nutritional and quality modification. This book offers readers information on innovative ways to improve cereal-based foods and beverages, useful for researchers and for industry operators.

  • Pages : 598 pages

Download or read book Plant Genetic Conservation written by Nigel Maxted and published by Cambridge University Press. This book was released on 2020-09-10 with total page 598 pages. Available in PDF, EPUB and Kindle. Book excerpt: Plant diversity sustains all animal life, and the genetic diversity within plants underpins global food security. This text provides a practical and theoretical introduction to the strategies and actions to adopt for conserving plant genetic variation, as well as explaining how humans can exploit this diversity for sustainable development. Notably readable, it initially offers current knowledge on the characterization and evaluation of plant genetic resources. The authors then discuss strategies from in situ and ex situ conservation to crop breeding, exploring how these can be used to improve food security in the face of increasing agrobiodiversity loss, human population growth and climate change. Each chapter draws on examples from the literature or the authors' research and includes further reading references. Containing other useful features such as a glossary, it is invaluable for professionals and undergraduate and graduate students in plant sciences, ecology, conservation, genetics and natural resource management.

Book Cetamura del Chianti

    Book Details:
  • Author : Nancy Thomson de Grummond
  • Publisher : University of Texas Press
  • Release : 2020-01-10
  • ISBN : 147731993X
  • Pages : 176 pages

Download or read book Cetamura del Chianti written by Nancy Thomson de Grummond and published by University of Texas Press. This book was released on 2020-01-10 with total page 176 pages. Available in PDF, EPUB and Kindle. Book excerpt: Expanding the study of Etruscan habitation sites to include not only traditional cities but also smaller Etruscan communities, Cetamura del Chianti examines a settlement that flourished during an exceptional time period, amid wars with the Romans in the fourth to first centuries BCE. Situated in an ideal hilltop location that was easy to defend and had access to fresh water, clay, and timber, the community never grew to the size of a city, and no known references to it survive in ancient writings; its ancient name isn’t even known. Because no cities were ever built on top of the site, excavation is unusually unimpeded. Intriguing features described in Cetamura del Chianti include an artisans’ zone with an adjoining sanctuary, which fostered the cult worship of Lur and Leinth, two relatively little known Etruscan deities, and undisturbed wells that reveal the cultural development and natural environment, including the vineyards and oak forests of Chianti, over a period of some six hundred years. Deeply enhancing our understanding of an intriguing economic, political, and cultural environment, this is a compelling portrait of a singular society.

Book Local Mediterranean Food Plants and Nutraceuticals

Download or read book Local Mediterranean Food Plants and Nutraceuticals written by Michael Heinrich and published by Karger Medical and Scientific Publishers. This book was released on 2006-01-01 with total page 199 pages. Available in PDF, EPUB and Kindle. Book excerpt: As a result of domestication - considered to be the most important cultural development of the past 13,000 years of human history - we depend today on a tiny number of domesticated plant and animal species for our food supply. Nevertheless, people continue to gather food which grows around their homes or they cultivate local varieties of food plants (as well as keep land races of domestic animals). Generally, wild varieties tend to be richer in micronutrients and bioactive secondary metabolites, which are produced in adaptation to local environmental conditions. These metabolites trigger further adaptive responses by producing 'protective', bioactive compounds which, when ingested, result in the transfer of protective effects to our organism. The preservation of local knowledge for future generations as well as the identification of new nutraceuticals by means of characterizing plant extracts with potential health beneficial effects are the main objectives of this book. The first part therefore focuses on the ethnobotanical study of local food plants in selected regions of the Mediterranean, i.e. their use as well as beliefs and cultural practices associated with it. The biological-pharmacological effects of these plants on selected (mostly in vitro) targets of the central nervous system and the cardiovascular system make up the second part, highlighting the potential of these plants for developing novel health foods, herbal medicines or local products with beneficial effects on health. Those interested in an integrated approach to the identification of new and health beneficial foods will undoubtedly find this book a valuable source of information and an inspiration for new scientific approaches to this age-old topic.

Download or read book The Natural History of Pompeii written by Wilhelmina Mary Feemster Jashemski and published by Cambridge University Press. This book was released on 2002-09-19 with total page 536 pages. Available in PDF, EPUB and Kindle. Book excerpt: The sudden destruction of Pompeii, Herculaneum and the surrounding Campanian countryside following the eruption of Vesuvius in AD 79 preserved the remarkable evidence that has made possible this reconstruction of the natural history of the local environment. Following the prototype of Pliny the Elder's Natural History, various aspects of the natural history of Pompeii are discussed and analyzed by a team of eminent scientists, many of whom have collaborated with Jashemski during her years of excavation of several gardens in the Vesuvian area. This volume brings together the work of geologists, soil specialists, paleobotanists, botanists, palaeontologists, biologists, chemists, dendrochronologists, ichthyologists, zoologists, ornithologists, mammalogists, herpetologists, entymologists, and archaeologists, affording a thorough picture of the landscape, flora, and fauna of the ancient sites. The detailed and rigorously scientific catalogues, which are copiously illustrated, provide a checklist of the flora and fauna upon which future generations of scholars can continue to build.
