En el primer capítulo se presenta el sector de la pastelería y sus particularidades. El segundo capítulo se adentra en las materias primas con las que trabajamos en pastelería. Finalmente, en el tercer capítulo se profundiza en la gestión del proceso de aprovisionamiento con el fin de asegurar la calidad del producto recibido, evitar mermas y garantizar el resultado del producto final. Además, cada capítulo cuenta con numerosos cuadros, figuras e imágenes que favorecen la comprensión y asimilación del contenido. También se incorporan actividades finales para repasar y afianzar los contenidos adquiridos. Asimismo, el enfoque elegido es práctico y el lenguaje empleado es claro y sencillo para que la comprensión y el aprendizaje de los contenidos sean lo más efectivos posible. En el quinto capítulo se expone la nutrición y la dietética aplicada a la repostería, para lo que se explican las propiedades nutricionales de los alimentos más utilizados en pastelería y algunos principios dietéticos básicos. Finalmente, el sexto capítulo está centrado en el control de calidad en restauración. Además, la obra incluye gran número de esquemas, imágenes, tablas y cuadros que favorecen el aprendizaje de los contenidos. Al mismo tiempo, al final de cada capítulo se incluyen útiles actividades finales para el repaso y la autoevaluación de los conocimientos adquiridos. Asimismo, el enfoque elegido es práctico y profundiza en los contenidos de forma gradual y con un lenguaje claro y sencillo que facilita la comprensión y el aprendizaje. Book excerpt: Updates for many countries have made it possible to estimate hunger in the world with greater accuracy this year. In particular, newly accessible data enabled the revision of the entire series of undernourishment estimates for China back to 2000, resulting in a substantial downward shift of the series of the number of undernourished in the world. Nevertheless, the revision confirms the trend reported in past editions: the number of people affected by hunger globally has been slowly on the rise since 2014. The report also shows that the burden of malnutrition in all its forms continues to be a challenge. There has been some progress for child stunting, low birthweight and exclusive breastfeeding, but at a pace that is still too slow. Childhood overweight is not improving and adult obesity is on the rise in all regions. The report complements the usual assessment of food security and nutrition with projections of what the world may look like in 2030, if trends of the last decade continue. Projections show that the world is not on track to achieve Zero Hunger by 2030 and, despite some progress, most indicators are also not on track to meet global nutrition targets. The food security and nutritional status of the most vulnerable population groups is likely to deteriorate further due to the health and socio economic impacts of the COVID-19 pandemic. The report puts a spotlight on diet quality as a critical link between food security and nutrition. Meeting SDG 2 targets will only be possible if people have enough food to eat and if what they are eating is nutritious and affordable. The report also introduces new analysis of the cost and affordability of healthy diets around the world, by region and in different development contexts. It presents valuations of the health and climate-change costs associated with current food consumption patterns, as well as the potential cost savings if food consumption patterns were to shift towards healthy diets that include sustainability considerations. The report then concludes with a discussion of the policies and strategies to transform food systems to ensure affordable healthy diets, as part of the required efforts to end both hunger and all forms of malnutrition.

According to advocates for sustainable food systems, they are also places to “vote with your fork” for environmental protection, vibrant communities, and strong local economies. Farmers markets have become essential to the movement for food-system reform and are a shining example of a growing green economy where consumers can shop their way to social change. Black, White, and Green brings new energy to this topic by exploring dimensions of race and class as they relate to farmers markets and the green economy. With a focus on two Bay Area markets—one in the primarily white neighborhood of North Berkeley, and the other in largely black West Oakland—Alison Hope Alkon investigates the possibilities for social and environmental change embodied by farmers markets and the green economy. Drawing on ethnographic and historical sources, Alkon describes the meanings that farmers market managers, vendors, and consumers attribute to the buying and selling of local organic food, and the ways that those meanings are raced and classed. She mobilizes this research to understand how the green economy fosters visions of social change that are compatible with economic growth while marginalizing those that are not. Black, White, and Green is one of the first books to carefully theorize the green economy, to examine the racial dynamics of food politics, and to approach issues of food access from an environmental-justice perspective. In a practical sense, Alkon offers an empathetic critique of a newly popular strategy for social change, highlighting both its strengths and limitations.
