Book Encyclopedia of Kitchen History

Download or read book Encyclopedia of Kitchen History written by Mary Ellen Snodgrass and published by Routledge. This book was released on 2004-12-29 with total page 2158 pages. Available in PDF, EPUB and Kindle. Book excerpt: A space common to all peoples, the kitchen embodies the cultural history of domestic life: how people around the world acquire, prepare, cook, serve, eat, preserve, and store food; what foods we eat and why and when; what utensils, cutlery, decorations, furnishings, and appliances we create and use; what work, play, chores, services, and celebrations we perform. The history of the kitchen reflects human ingenuity solving problems posed by daily necessity and the human desire for social comfort and continuity. Kitchen history also tells us much about our interaction with others and with other cultures as well. From the history of beer, cooking stones, ergonomics, medieval kitchens, Roman cookery, pasta, and chopsticks to inventors such as Nils Dalén and George Washington Carver and cookbook authors such as Isabella Beeton and Julia Child, this A-Z Encyclopedia presents almost 300 wide-ranging entries that detail the culinary history of each topic. The Encyclopedia of Kitchen History features: *See Alsos which lead the reader to pertinent entries *Useful Sources section at the end of entries that compiles a list of books, CDs, journals, newspapers, and online databases and news sources for further research *An appendix of Common Sources- the most helpful resources on domestic histories *Numerous illustrations that explain and communicate the vibrancy of domestic culture *Thorough, analytic index that directs the reader to the people, writings, recipes, inventions, processes, and foodstuffs that make up kitchen history. From the discovery of fire to the latest space mission, the Encyclopedia of Kitchen History brings together the rich diversity of kitchen history in one accessible volume. Students, researchers, scholars, and culinary aficionados- from beginners to experts- will find this Encyclopedia to be a fascinating look into the history of the kitchen from the foodstuffs prepared to the tools and implements used as well as the innovators who shaped its function and utility.

Book The Cook Book of Rare and Valuable Recipes

Download or read book The Cook Book of Rare and Valuable Recipes written by An Eminent Physician and published by Andrews McMeel Publishing. This book was released on 2013-10-15 with total page 147 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume in the American Antiquarian Cookbook Collection, published in Philadelphia in 1850, is an exhaustive compilation of hundreds of methods, formulas, and recipes for culinary, housekeeping, agricultural, and medical issues of importance in nineteenth century households, assembled by an unknown physician. In his introduction, the “eminent physician” cited as compiler of this fascinating volume states, “There was a time when ladies knew nothing beyond their own family concerns; but in the present day there are many who know nothing about them.” His intention was to supply every possible bit of information about housekeeping, homemaking, farming, and medical care that contemporary women seemed to lack. His work contains hundreds of procedures, advice, and recipes organized in a whimsical hodgepodge without a table of contents or index to guide the reader. For example, a recipe for “an excellent tooth power” is sandwiched in between “a method of cleaning china” and “how to stain paper.” Similarly, “pickling tomatoes” can be found between “means of stopping a runaway horse” and “grafting grapevines.” It makes an engrossing, entertaining read that provides an intriguing portrait of nineteenth century lifestyles. Although many medical entries appear throughout the text, the final 20 percent of the book appears to be an independent and uncredited work entitled The Family Physician—such plagiarism was common in nineteenth century publishing. In fact, the disorganization of the material makes it likely that the entire contents of the book were taken from an existing volume or a number of sources and the “compiler” simply collected other authors' work in this encyclopedic treasury. This edition of The Cook Book of Rare and Valuable Recipes was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the society is a research library documenting the lives of Americans from the colonial era through 1876. The society collects, preserves, and makes available as complete a record as possible of the printed materials from the early American experience. The cookbook collection comprises approximately 1,100 volumes

This book was released on 2013-04-16 with total page 616 pages. Available in PDF, EPUB and Kindle. Book excerpt: Published in New York in 1829, Modern Domestic Cookery, and Useful Receipt Book shares both helpful household managing tips and over 650 recipes that are particularly adapted to combine “economy and gentility in its receipts and directions.” Author W.A. Henderson states in the preface that the intent of the book is help women have knowledge of “domestic cookery, which, [the author] must be suffered to remark, is a subject of infinitely greater importance to her than superficial requirements, whether we consider her as a daughter, wife, or mother.” With this intent, Modern Domestic Cookery, and Useful Receipt Book provides practical household information such as managing family accounts, scheduling meals, carving meats, and properly setting a table, including diagrams. Henderson completes this tome of domestic information with an extensive recipe list that includes dishes such as Beef Steak Pie, Portugal Cakes, Spinach Tarts, Calf’s Head, and Hare Tugged.
