Book excerpt: "Out of the Hay and into the Hops explores the history and development of hop cultivation in the Weald of Kent together with the marketing of this important crop in the Borough at Southwark (where a significant proportion of Wealden hops were sold). A picture emerges of the relationship between the two activities, as well as of the impact this rural industry had upon the lives of the people engaged in it. Dr Cordle draws extensively on personal accounts of hop work to evoke a way of life now lost for good. Oral history, together with evidence from farm books and other sources, records how the steady routine of hop ploughing and dung spreading, weeding and spraying contrasted with the bustle and excitement of hop picking (bringing in, as it did, many itinerant workers from outside the community to help with the harvest) and the anxious period of drying the crop. For hops, prey to the vagaries of weather and disease, needed much care and attention to bring them to fruition. In early times their cultivation provided work for more people than any other crop. The diverse processes of hop cultivation are examined within the wider context of events such as the advent of rail and the effects of war, as are changes to the working practices and technologies used, and their reception and implementation in the Weald. Meanwhile, in the Borough, an enclave of hop factors and merchants, whose interests sometimes conflicted with those of the hop growers, arose and then suffered decline. A full account of this trade is presented, including day-to-day working practices, links with the Weald, and the changes in hop marketing following Britain's entry into the European Economic Community. This book provides readers with a fascinating analysis of some three hundred years of hop history in the Weald and the Borough. In these buildings, hops were dried, pressed, and bagged for despatch to breweries. In Kent and Sussex, they are called 'oasts' or 'oast houses', and in other counties 'hop kilns'. Oasts and hop kilns are testimony to a specialised and important rural industry, and for hundreds of years, they were a defining feature of the countryside. By the late 19th century, there were as many as 8,000 hop kilns and oast houses in England. Book excerpt: It is 25 years since Dr Burgess wrote his invaluable book on hops and in the intervening period there have been very many advances in hop research and hop production techniques. When invited to produce a replacement for that book, therefore, the problem was not finding enough new material but deciding on what to include. People interested in reading about the hop are likely to fall into very diverse categories. Hop growers will be looking for practical advice on production methods while research workers with specialist knowledge in one field may want detailed information about research in other disciplines. In addition, there are many people for whom hops are of much more general interest and for them a source of basic information about the crop will be required. The aim has not been to produce a detailed growers' handbook, since techniques vary considerably from district to district and I believe that it is better to obtain advice from neighbouring growers or from specialist advisers than from any book. What I have attempted is to outline the basic principles upon which production methods should be based. At the same time, I have tried to include material that will be of general interest both to those who work with hops and to those to whom they might otherwise remain a complete mystery. In doing this my own personal interests have inevitably played an important part.

Book excerpt: People like to believe in a past golden age of traditional English countryside, before large farms, machinery, and the destruction of hedgerows changed the landscape forever. However, that countryside may have looked both more and less familiar than we imagine. Take todays startling yellow fields of rapeseed, seemingly more suited to the landscape of Van Gogh than Constable. They were, in fact, thoroughly familiar to fieldworkers in seventeenth-century England. At the same time, some features that would have gone unremarked in the past now seem like oddities. In the fifteenth century, rabbit warrens were specially guarded to rear rabbits as a luxury food for rich mens tables; whilst houses had moats not only to defend them but to provide a source of fresh fish. In the 1500s we find Catherine of Aragon introducing the concept of a fresh salad to the court of Henry VIII; and in the 1600s, artichoke gardens became a fashion of the gentry in their hope of producing more male heirs. The common tomato, suspected of being poisonous in 1837, was transformed into a household vegetable by the end of the nineteenth century, thanks to cheaper glass-making methods and the resulting increase in glasshouses. In addition to these images of past lives, Joan Thirsk reveals how the forces which drive our current interest in alternative forms of agriculture a glut of meat and cereal crops, changing dietary habits, the needs of medicine have striking parallels with earlier periods in our history. She warns us that todays decisions should not be made in a historical vacuum: we can find solutions to our current problems in the experience of people in the past.
