Available in PDF, EPUB and Kindle. Book excerpt: Human knowledge of the food and fiber systems affects nearly every facet of the society we live in. While this industry affects billions of lives daily, little research has been conducted to identify the level of knowledge on this industry in college age students. This replicated study was produced to evaluate and assess the agricultural knowledge and personal perception of the industry of undergraduate students at Southern Illinois University Carbondale (SIU) in the Fall 2018 semester. Participants completed a 25-questionnaire food and fiber literacy test to assess their knowledge and 14 questions regarding personal characteristics and perceptions of the agricultural industry. The average score on the agricultural literacy test was an 18.23 out of 25 questions correct. College of Agricultural Sciences and College of Science scored the highest while College of Education and Human Services and College of Applied Sciences and Arts scores were among the lowest. Comparisons of student demographic information such as hometown size, organization participation and gender were conducted to determine correlation between specific groups and their agricultural literacy levels. Females slightly outscored males. Cities and Rural communities achieved the highest averages when comparing community sizes. Students who enrolled in agricultural education courses in high school seemed to score higher on the agricultural literacy test. A majority of respondents stated they strongly agree that agriculture is important to society; but when asked how knowledgeable they considered themselves to be in agriculture, an overwhelming amount of students responded below average. The results of this study found a hopeful advancement in agricultural literacy but also revealed possible influential factors in poor agricultural knowledge. It is recommended that such a study be continually conducted at Southern Illinois Universities and other institutions of higher education.

Book excerpt: Abstract: The purpose of this study was to assess the agricultural knowledge and perception toward agriculture of eleventh grade students in Ohio rural schools. The study further sought to determine differences in the level of agricultural knowledge and perception toward agriculture in the following groups: (a) students enrolled in agricultural education in schools with a secondary agricultural education program, (b) students not enrolled in agricultural education in schools with a secondary agricultural education program, and (c) students in schools without a secondary agricultural education program. Seventeen schools with a secondary agricultural education program and 15 schools without a secondary agricultural education program participated in the study. Responses were received from 716 students. The instrument used in the study was the Agricultural Awareness Instrument, which measured agricultural knowledge and perception toward agriculture of eleventh grade students. Internal consistency was calculated for the agricultural knowledge section (.90) and the perception toward agriculture section (.81).

Book excerpt: The purpose of this study was to assess the knowledge of and attitude toward issues related to agriculture, food, and the environment of students in the Colleges of Education and students in the Colleges of Law in South Korea. This study was conducted to determine if selected demographic characteristics were predictive of greater knowledge or a more positive attitude toward agriculture. The sample for this study consisted of 1,453 junior and senior students who were enrolled in 27 different departments at 11 national universities in South Korea. The students were enrolled in a College of Education or a School of Law during the 1997 spring semester. The Korean language version of the Agricultural Awareness Survey was used to collect data for this study. A pilot test was conducted to clarify the items of the instrument written in Korean language. Descriptive statistics were computed to compare the knowledge and attitude scores. Null hypotheses were tested using a t-test and a stepwise linear regression with an a priori alpha level of.05. The following conclusions were drawn from this study. (1) Students in Schools of Law are more knowledgeable about agriculture than students in Colleges of Education in South Korea. (2) Students in Schools of Law have a more positive attitude toward agriculture than students in Colleges of Education in South Korea. (3) The attitude of South Korean students in Schools of Law and Colleges of Education toward agriculture appears to be neutral (neither positive nor negative). (4) South Korean College of Education and Law School students who are male, living on a farm, reading newspapers, older, have not been a member of FFK, or have relatives working in an agricultural business are more knowledgeable about agriculture than other students. (5) South Korean College of Education and Law School students who are male and read news-magazines have a more positive attitude toward agriculture than other students.

The United Nations projects the global population to swell to 9.75 billion people by 2050, and to proliferate to 11.2 billion by 2100. The non-agricultural population has little to no understanding or comprehension of the complexities of sustaining a viable agricultural system. Agricultural literacy is an area often unseen and rarely discussed outside specific agricultural disciplines. Society does not view agriculture as being important, yet it is important that society be properly educated on issues in order to reach well-informed decisions and render prudent choices that impact the world around them. Illinois ranks fourth in the nation for agricultural productivity, yet the agricultural literacy of its elementary students is unknown. The purpose of this study was to assess the agricultural knowledge of selected Illinois classrooms of public elementary school students in kindergarten through fifth grades that employ Agriculture in the Classroom (AITC) methods and materials. A quasi-experimental nonequivalent control group design, using a pretest and a posttest, was utilized to study. A Solomon Four-Group design analysis was used to determine if pretest sensitization, or test reactivity effect, existed in this study. The study found that AITC treatment and control group students possessed some agricultural knowledge regarding the five thematic areas of the Food and Fiber Systems Literacy (FSSL) Framework. The kindergarten through first grade post mean scores by treatment and theme indicated the treatment group answered 77.89 percent of the questions correctly and the control group answered 72.55 percent correctly. The treatment and control groups were most knowledgeable about Theme 5 (Food, Nutrition and Health) followed by Theme 4 (Business and Economics), with the treatment group being more knowledgeable about Theme 1 (Understanding Food and Fiber Systems), while the control group was more knowledgeable about Theme 3 (Science, Technology and Environment). The treatment and control groups were least knowledgeable about Theme 2 (History, Geography and Culture). The second through third grade post mean scores by treatment and theme indicated the treatment group answered 75.05 percent of the questions correctly and the control group answered 74.07 percent correctly. The treatment group was most knowledgeable about Theme 3 (Science, Technology and Environment) followed by Theme 1 (Understanding Food and Fiber Systems) and Theme 5 (Food, Nutrition and Health). The control group was most knowledgeable about Theme 1 (Understanding Food and Fiber Systems) followed by Theme 3 (Science, Technology and Environment) and Theme 4 (Business and Economics). The treatment and control groups were least knowledgeable about Theme 2 (History, Geography and Culture). The fourth through fifth grade post mean scores by treatment and theme indicated the treatment group answered 66.73 percent of the questions correctly and the control group answered 52.91 percent correctly. The treatment group was most knowledgeable about Theme 2 (History, Geography and Culture) followed by Theme 3 (Science, Technology and Environment) and Theme 5 (Food, Nutrition and Health). The control groups were most knowledgeable about Theme 3 (Science, Technology and Environment) followed by Theme 1 (Understanding Food and Fiber Systems) and Theme 4 (Business and Economics). The treatment was least knowledgeable about Theme 4 (Business and Economics) and Theme 5 (Food, Nutrition and Health). The control group was least knowledgeable about Theme 2 (History, Geography and Culture) followed by Theme 5 (Food, Nutrition and Health).

Book excerpt: The purpose of this study has been to determine the effects of an introductory agricultural education course on high school urban students agricultural literacy and their perceptions of the food and fiber industry. North Carolina schools offer an introductory course called Agriscience Applications and is meant to be the first in a series of agricultural education courses. This course is expected to positively impact the agricultural literacy and perceptions of agriculture upon its students. Data were collected from six schools in urban counties throughout North Carolina with 152 respondents. Five questions were specified for this study as follows: 1) Does an introductory agricultural education course increase students agricultural literacy in an urban agricultural education program; 2) does an introductory agricultural education course increase student knowledge of agricultural careers and opportunities for employment; 3) does an introductory agricultural education class increase student knowledge of agriculture's relationship with public policy; 4) does an introductory agricultural education class change a student's understanding of agriculture's relationship with the environment and natural resources; 5) what influence does an introductory agricultural education class have upon students' perceptions of the food and fiber industry? Upon completion of the Agriscience Applications course, students did increase their agricultural literacy. The students showed greatest improvement in agriculture literacy regarding public policy and the least improvement in career related knowledge. The perception scores of students regarding agriculture were not statistically significant.

Data were collected from 2,005 respondents representing the following groups: purposely selected primarily white Indiana high school students and primarily black Michigan high school students, randomly selected rural Missouri adults attending one of several town meetings, and randomly selected urban Missouri adults contacted in various settings (including churches, libraries, and grocery stores). Adults were more knowledgeable about agriculture than were high school students. Respondents were most knowledgeable and positive about natural resources and least knowledgeable and positive about agricultural policy. No differences among ethnic groups' perceptions of agriculture or between rural and urban Missouri adults' knowledge of agricultural concepts were discovered. The study recommendations included the following: integrating agricultural instruction throughout elementary and secondary school curricula, developing agricultural literacy instructional efforts targeting inner city minority students, broadcasting television agricultural literacy programs for adults in urban areas, and establishing a National Center for Agricultural Literacy to coordinate agricultural literacy efforts at a national level.
