Standards for Apples describe the varying degrees of firmness (or ripeness) of a mature apple: (some ripening may occur while the fruit are still on the tree). Hard means apples with a tenacious flesh and starchy flavor; firm means apples with a tenacious flesh but which are becoming crisp with a slightly starchy flavor, except the Deli cious variety; firm ripe means apples with crisp flesh except that the flesh of the apples of the Gano, Ben Davis, and Rome Beauty varieties may be slightly mealy; ripe means apples with mealy flesh and soon to become soft for the variety; and overripe means apples which are dead ripe, with flesh very mealy or soft, and past commercial utility. In defining maturity as the condition of mature fruit, Lott (fig) said that maturity has no stages or degrees. In each region, production for the fresh market consists of different proportions of various varieties, grades, and sizes of apples. Harvesting, storing, and packing practices vary according to means of procurement, picking labor used, length of the storage season, type of storage, quantity of apples stored, type of containers packed, terms of sale, types of buyers, and the geographic markets served. The picture is further complicated by differing cost structures for harvesting, storing, packing, and transporting fresh apples to market. Since survival in the fresh apple industry depends on all these factors, each packer and shipper is vitally concerned with the relative efficiency of his operation and with the competitive position of his region. Apple growers are interested in factors that influence their returns be tween the time apples are harvested and the time they are sold. The concern of growers, packers, and shippers was especially evident during the three marketing seasons through which were characterized by high production levels and depressed prices for both fresh apples and apples for processing. The crop, which was the largest on record, exceeded 160 million bushels, including over 88 million bushels marketed for fresh consumption. Consumers are also interested in the costs involved in producing and mar keting apples through to the retail store. Grapes also are stored extensively in some places, particularly in California. Refrigeration is used also for the precooling or short-time storage of other fruits, such as cherries, plums, and apricots. Rural electrification and automatic refrigera tion equipment are now universal, and indi vidual fruit growers or small groups of grow ers have been building cold-storage plants at or near their orchards instead of relying on large plants that serve a whole community or a large number of growers. This has been coincident with the development of better handling and packing methods. The handling methods, transportation equipment, and facili ties required for sorting and packing extended the distance that apples can be moved from orchard to the cold-storage house so that pack ing and shipping will not be under the pressure of getting the job done in a matter of a few days after picking. Having refrigeration facili ties at hand has permitted the orchardist to give his fruit optimum protection while it is awaiting packing and to employ a compara tively small crew of skilled harvesters instead of having to mobilize large crews. It is the practice to repack practically the whole of this large quantity of apples, at very considerable expense. This refers principally to the apples stored in the special warehouses. The repacking may be necessary under these conditions of storage, in order that the rotten and defective apples may be discarded, but it results in serious damage to the sound fruit by increasing the number of bruises, to which the apples are more liable than they are at harvest time, on account of their riper and softer condition. These repacked apples are sent forward to market during the winter and early spring months. It is an undeniable fact that a large proportion of them are in a more or less overripened and damaged condition. The shrinkage which occurs in repacking is a direct loss, amounting, on the whole, to a very large sum. The indirect loss from the demoralizing effect of a large quantity of overripe and damaged fruit on the market is also great, and difficult to estimate. As the crop of apples is increasing from year to year, and the industry is growing in importance by the opening of a large market in the prairie provinces in addition to the well sustained demand in Great Britain and continental countries, it is obvious that any means which may be adopted for better preservation and to reduce the waste and cost of repacking should be a matter of interest to the fruit grower and dealer.
