Download or read book Food Safety from Farm to Fork written by Juliana Kiio and published by Cambridge Scholars Publishing. This book was released on 2020-10-12 with total page 161 pages. Available in PDF, EPUB and Kindle. Book excerpt: Globally, there are many safety concerns emanating from the consumption of food, and are categorized as physical, biological and chemical hazards. This volume explores a number of safety issues pertaining to foods consumed across the globe today. It represents a useful resource for researchers, food handlers and legislative bodies as it presents key findings in the area of food safety, and details the findings of a number of scientific research studies conducted through surveys, laboratory analysis and environmental assessments. The findings indicate the presence of eminent food safety threats along the food chain, ranging from pathogens, pesticide, and antibiotic residues, to heavy metals, food additives, aflatoxins, and allergens, among others. Food handling practices along the food chain and the importance of adhering to good agricultural and manufacturing practices are shown to play a crucial role in ensuring safe foods.

Download or read book Novel Techniques in Sensory Characterization and Consumer Profiling written by Paula Varela and published by CRC Press. This book was released on 2014-04-23 with total page 408 pages. Available in PDF, EPUB and Kindle. Book excerpt: Sensory characterization is one of the most powerful, sophisticated, and extensively applied tools in sensory science. This book focuses on sensory characterization of food and non-food products, providing an overview of classical and novel alternative methodologies. A complete description of the methodologies is provided, accompanied by detailed information for implementation, discussion of examples of applications, and case studies. The implementation of the majority of the methodologies is performed in the statistical free software R, making the book accessible for people unfamiliar with complex statistical software.
Download or read book Characterization of Food written by Anilkumar G. Gaonkar and published by Elsevier. This book was released on 1995-09-27 with total page 465 pages. Available in PDF, EPUB and Kindle. Book excerpt: Rapid and continued developments in electronics, optics, computing, instrumentation, spectroscopy, and other branches of science and technology resulted in considerable improvements in various methodologies. Due to this revolution in methodology, it is now possible to solve problems which were previously considered difficult to solve. These new methods have led to a better characterization and understanding of foods. The aim of this book is to assemble, for handy reference, various emerging, state-of-the-art methodologies used for characterizing foods. Although the emphasis is on real foods, model food systems are also considered. Methods pertaining to interfaces (food emulsions, foams, and dispersions), fluorescence, ultrasonics, nuclear magnetic resonance, electron spin resonance, Fourier-transform infrared and near infrared spectroscopy, small-angle neutron scattering, dielectrics, microscopy, rheology, sensors, antibodies, flavor and aroma analysis are included. This book is an indispensable reference source for scientists, engineers, and technologists in industries, universities, and government laboratories who are involved in food research and/or development, and also for faculty, advanced undergraduate, graduate and postgraduate students from Food Science, Food Engineering, and Biochemistry departments. In addition, it will serve as a valuable reference for analytical chemists and surface and colloid scientists.

Download or read book Chemical and Technological Characterization of Dairy Products written by Michele Faccia and published by MDPI. This book was released on 2021-03-02 with total page 216 pages. Available in PDF, EPUB and Kindle. Book excerpt: Milk processing is one of the most ancient food technologies, dating back to around 6000 B.C. A huge number of milk products have been developed worldwide, representing a spectacular example of biodiversity and a priceless cultural heritage. After millennia of unanimous appreciation as a pillar of human nutrition, a series of questions about the desirability of their wide consumption have been raised. In the light of the growing threat deriving mostly from the spread of veganism and health consciousness, improving milk prcoessing safety and dairy nutritional characteristics, as well as deepening their functional characteristics, are of a primary exigency. This Special Issue contains several articles focusing on this hot topic, all of which add knowledge to the field and supply interesting ideas for developing new products and processes.
